3 cups water
3 cups instant white rice (such as Minute®)
2 teaspoons vegetable oil
3 skinless, boneless chicken breasts, cut into chunks
12 slices bacon
1 cup chopped green onion
½ cup soy sauce, or to taste

Steps:

  • Bring water to a boil in a saucepan. Stir instant white rice into boiling water. Cook rice until softened, about 5 minutes.
  • Heat oil in a separate skillet over medium heat. Cook chicken in hot oil until cooked through and no longer pink in the middle, 5 to 7 minutes.
  • Fry bacon in a large wok or skillet over medium-high until hot and cooked through but not yet crunchy, 2 to 3 minutes per side. Remove bacon to a plate lined with paper towels. Drain fat from wok, reserving 1 to 2 tablespoons of drippings in the bottom of the wok. Cut bacon into small pieces.
  • Return wok to medium-high heat and heat reserved bacon drippings. Combine rice, chicken, bacon, green onions, and soy sauce in the wok; cook and stir until evenly mixed and hot, 2 to 3 minutes.

2 tablespoons neutral oil, such as canola or vegetable, plus more as needed
3/4 cup diced bacon or ham
3/4 cup diced white onion
2 cloves garlic, minced
1/4 cup diced carrots
1/4 cup snap peas, sliced, or other seasonal vegetables
2 large eggs, beaten
4 cups cooked rice
2 tablespoons soy sauce
2 tablespoons oyster sauce
Kosher salt
2 scallions, chopped
Freshly ground white pepper

Steps:

  • Heat a large skillet or wok over high heat, then add the 2 tablespoons of oil and the bacon. Cook the bacon, stirring occasionally, until crispy, about 2 minutes. Stir in the onion, garlic, carrots and snap peas and cook, stirring occasionally, until the vegetables start to soften, about 1 minute.
  • Add the eggs to the skillet, then add the rice directly into the wet egg. Using the back of a spatula or spoon, press the rice into the egg, fold and repeat until the rice is completely coated and heated through. Add the soy sauce and oyster sauce and stir to coat the rice. Season with a pinch of salt. Cook over high heat, stirring, until the rice is heated through, 2 to 4 minutes. 2 tbsp oil (, peanut, vegetable or canola)
2 eggs (, lightly whisked)
150g (5oz) chicken breast (, finely sliced into small pieces)
2 garlic cloves (, minced)
1/2 onion (, finely chopped)
120g (4oz) bacon (, excess fat trimmed, chopped (Note 1))
1 small carrot* (, peeled and diced 0.75cm / 1/3")
1/2 cup frozen corn* ((or can or fresh))
1/2 cup frozen peas*
2 cups (packed) cooked white rice (, day old (Note 2))
3/4 cup green onions (, finely sliced)
2.5 tbsp Chinese cooking wine or Mirin ((Note 3))
1 tbsp oyster sauce ((Note 4))
3 tbsp light soy sauce ((Note 5))
1/2 tsp sesame oil (, optional)
1/4 tsp white pepper (, optional)

Steps:

  • Sauce & chicken: Mix Sauce in a bowl. Pour 2 tsp over chicken, toss to coat, then set aside for 10 minutes.
  • Egg: Heat 1 tbsp oil in a wok or skillet over medium heat. Add egg and scramble until just cooked (still a touch wet) then remove.
  • Fried Rice: Turn heat up to high, add remaining 1/2 tbsp oil and bacon into same skillet. Cook for 1 minute or so until fat starts to melt, then add onion and garlic.
  • Cook until bacon is light golden - about 1 1/2 minutes.
  • Add vegetables (still frozen is fine). Cook for 1 minute.
  • Add chicken and cook until it changes from pink to white - about 1 1/2 minutes.
  • Add rice and Sauce ingredients. Cook for 1 1/2 minutes, stirring consantly.
  • Add egg and green onion, toss through to disperse then remove from heat.
  • Serve immediately!

3 slices thick-cut bacon, thinly sliced

1 tablespoon low-sodium soy sauce
6 large eggs

1/2 pint grape tomatoes, halved
1 tablespoon minced peeled ginger
6 ounces snow peas, trimmed and halved
1 orange, yellow or red bell pepper, thinly sliced
1 bunch scallions, thinly sliced
4 cups cooked brown or white rice (thawed if frozen)

Steps:

  • Heat a large nonstick skillet over medium-high heat. Add the sesame oil and bacon; cook, stirring occasionally, until the bacon is almost crisp, 4 minutes.
