3 eggs, yokes and whites separated
2 cups buttermilk

1 tbsp bacon fat
8 oz crumbled bacon
6 oz sharp cheddar cheese, shredded
5 scallions, diced
Non-stick cooking spray

Steps:

Steps:

  • Preheat your waffle iron. Mine only has one setting anyway, but you want the iron to be pretty hot.
  • Preheat the oven to 200 degrees F.
