Steps:
- Preheat the oven to 400 degrees F. Position racks in the top and bottom of the oven. Line 2 rimmed baking sheets with foil and set cooling racks into the baking sheets.
- Using your fingers, crumble together the brown sugar, smoked paprika and several grinds of black pepper on a plate. Dredge the bacon on both sides in the brown sugar mixture, rubbing so the sugar adheres. Arrange the slices on the racks without touching.
- Bake until the bacon is crisp and caramelized, flipping the slices and rotating the baking sheets from top to bottom halfway through, about 20 minutes total. Let the slices cool on the racks, turning once or twice so they don't stick.
BACON AND BROWN SUGAR INFUSED TILAPIA
My husband says this dish reminds of him of bacon wrapped scallops. It has that savory, yet slightly sweet taste. Quick and easy to make. I initially planned to wrap the filets with the bacon, but the bacon cooked up to fast and so I just finished it in the pan with the filets.

- Cook until the fish is flaky and white. Bacon may need a few extra minutes, and that is okay.

Tips:
- Choose fresh tilapia fillets with firm flesh and vibrant color. Avoid fillets that are slimy or have an off odor.
- If using frozen tilapia, thaw it completely in the refrigerator overnight or under cold running water for about 30 minutes.
- Pat the tilapia fillets dry with paper towels before cooking to ensure they crisp up nicely in the pan.
- Use a nonstick skillet or well-seasoned cast iron pan to prevent the tilapia from sticking.
- Cook the tilapia over medium heat to prevent it from burning or overcooking. The ideal internal temperature for tilapia is 145 degrees Fahrenheit (63 degrees Celsius).
- To infuse the tilapia with bacon and brown sugar flavor, cook the bacon until crispy and then add the brown sugar to the pan. Cook for a few minutes, stirring constantly, until the sugar has dissolved and caramelized.
- Add the tilapia fillets to the pan and cook for 3-4 minutes per side, or until cooked through. The fish should flake easily with a fork.
- Serve the tilapia immediately with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.
