4 bagels, split and toasted
1/2 cup garden vegetable cheese spread
1/2 cup sliced pimiento-stuffed olives
8 bacon strips, halved
4 large eggs
4 slices Muenster cheese

Steps:

  • Spread each bagel half with cheese spread. Place olives on bagel bottoms; set aside. , In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 3 tablespoons drippings. Heat drippings over medium-hot heat. Add eggs; reduce heat to low. Fry until white is completely set and yolk begins to thicken but is not hard. , Place an egg on each bagel bottom. Layer with cheese, bacon and bagel tops.

This is a VERY easy breakfast that I paired down the calories count. I love making it because it's easy to clean up and prepare. I haven't had them in years, but I'm always looking for something new to do to so my girlfriend won't get bored with the standard favorites. (Also great for breakfast in bed...). You can certainly disregard the "Lower-Cal" style and go with Regular Bacon, Regular Cream Cheese and Regular Bagels. If you try it, let me know what you think.

4 miniature bagels (I get the 100 calorie ones)
4 slices turkey bacon
4 tablespoons fat-free cream cheese
1 whole tomato (cut in to 4 slices)
1 teaspoon cooking oil (choose your favorite)

Steps:

  • Add a bit of oil in a frying pan at medium high heat. Fry the Turkey Bacon to desired crispiness, (I like it a bit crispier for this recipe) you can also cook the bacon in the Microwave is you wanted to. While cooking the bacon, slice and open the bagels and toast in toaster or Toaster Oven. When Bacon is done to desired crispiness, drain off excess grease. Cut bacon strips in half (width wise). Spread Cream cheese, on one or both halves (i do it on both). Add 1 slice of tomato and both bacon halves and make in to sandwiches and they are ready to serve.

Tips:

  • To make low-fat bacon, start by trimming off any visible fat from the bacon strips. Then, place the bacon strips on a baking sheet lined with parchment paper. Bake the bacon in a preheated oven at 400°F (200°C) for 15-20 minutes, or until the bacon is crispy. Drain the bacon on paper towels before serving.
  • To make low-fat bagels, start by mixing together whole wheat flour, baking powder, baking soda, and salt. Then, add in low-fat milk, water, and honey. Stir until the ingredients are well combined. Knead the dough on a floured surface for a few minutes, until it is smooth and elastic. Cover the dough with plastic wrap and let it rise in a warm place for 30 minutes. Punch down the dough and divide it into 12 equal pieces. Roll each piece of dough into a rope and then shape it into a bagel. Place the bagels on a baking sheet lined with parchment paper. Cover the bagels with plastic wrap and let them rise in a warm place for 15 minutes. Preheat the oven to 375°F (190°C). In a large bowl, whisk together water and baking soda. Dip each bagel into the baking soda solution, then place them on the prepared baking sheet. Bake the bagels for 20-25 minutes, or until they are golden brown. Let the bagels cool before serving.
