BEAUTIFUL SALAD

Beautiful Salad image

A spur-of-the-moment creation when I wanted something with a great flavor punch and lots of color, plus quick to prepare---this one fills the bill, with baby spinach and colorful cranberries and mandarin oranges, plus the crunch of sweetened almonds and the pungent feta cheese---a new favorite at our house! You may substitute blue cheese for the feta and any kind of sweetened pecans or walnuts, if desired, for the almonds.

SPINACH, MANDARIN ORANGE, STRAWBERRY, RED ONION SALAD

Spinach, mandarin orange, strawberry, red onion salad image

Easy and hits all the taste buds! great for a summer cookout...so tasty, kids wouldnt even know its spinach!

Provided by Danielle Matthews

Categories     Salads

Time 15m

Number Of Ingredients 5

2 pkg baby spinach
1 pkg strawberries, fresh
2 can(s) canned mandarin oranges
1 red onion
1 bottle light raspberry vinagarette dressing

Steps:

  • 1. Wash and drain spinach and take off large stems. Put in large bowl.
  • 2. Wash and drain strawberries and cut into quarters. Put into bowl.
  • 3. Slice red onion thinly and put into bowl. I use whole onion but if you want, you can use half.
  • 4. Drain mandarin oranges and put into bowl.
  • 5. Just before serving, pour bottle of dressing and mix ingredients. I use whole bottle, but you can use it to taste. Its best to finish off the salad because the spinach gets soggy if leftover.

Tips:

  • Choose fresh, tender baby spinach: Avoid wilted or bruised leaves for the best flavor and texture.
  • Use a variety of mandarin oranges: For a sweeter salad, opt for Satsuma or Clementine oranges. For a tarter flavor, try Dancy or Murcott oranges.
  • Slice the red onions thinly: This will help to mellow their sharp flavor.
  • Toast the walnuts: Toasting the walnuts will enhance their flavor and make them more crunchy.
  • Use a light, flavorful dressing: A simple vinaigrette or citrus dressing is a good choice for this salad.
  • Serve immediately: Baby spinach salad is best enjoyed fresh, so serve it as soon as possible after assembling.

Conclusion:

This baby spinach salad with mandarin oranges and red onions is a refreshing, flavorful, and nutritious side dish or light lunch. It's packed with vitamins, minerals, and antioxidants, and it's a great way to get your daily dose of fruits and vegetables. The sweet and tangy dressing complements the fresh spinach and citrus flavors perfectly, and the toasted walnuts add a nice crunch. This salad is sure to be a hit at your next gathering!
