"TWICE BAKED" BABY POTATOES WITH CAVIAR

These special occasion-worthy bite-sized spuds are crowned with sour cream and caviar. Tip: these melt-in-your-mouth morsels pair especially well with a glass of bubbly-cheers!

Provided by Greg Lofts

Categories     Food & Cooking     Appetizers

Time 1h30m

Yield Makes about 35

Number Of Ingredients 8

1 1/2 pounds baby red potatoes (about the size of cherry tomatoes)
Kosher salt and freshly ground pepper
1/4 cup cream cheese, room temperature
2 tablespoons unsalted butter, melted
1/4 cup whole milk
2 tablespoons finely chopped chives, plus more for serving (optional)
Sour cream, for serving
Caviar or trout roe, for serving (optional)

Steps:

  • Preheat oven to 425°F. In a pot, cover potatoes with about 2 inches of cool water; bring to a boil. Season generously with salt and cook until potatoes are easily pierced with the tip of a knife but still holding their shape, 8 to 10 minutes; drain. When cool enough to handle, trim and discard 1/4 inch from top of each potato. (If necessary, trim bottoms flat so potatoes stand upright.)
  • Using a small paring knife, the smaller side of a melon baller, or a demitasse spoon, carefully scoop flesh from potatoes, leaving 1/4 inch flesh intact all around bottom and sides. Transfer hollowed potatoes to parchment-lined baking sheets.
  • For the smoothest texture, press potato flesh through a ricer into a bowl. Stir in cream cheese, butter, milk, and chives to thoroughly combine (or, if not using a ricer, mash to combine until smooth); season with salt and pepper.
  • Transfer potato mixture to a piping bag fitted with a plain tip, or a resealable plastic bag with a corner snipped. Pipe mixture into hollowed potatoes and bake until they are heated through and browned in places on top, 20 to 22 minutes. Let cool a few minutes; dollop with sour cream and top with caviar, trout roe, or more chives. Serve warm.

BABY LOX POTATOES APPETIZER

BABY LOX POTATOES APPETIZER image

Categories     Bean

Number Of Ingredients 9

INGREDIENTS
2 pounds small red new potatoes or baby potatoes (2 inches each)
2 1/2 tbsp extra virgin olive oil, divided
3/4 cup nonfat Greek yogurt
1/4 cup cream cheese
8 oz. Nova lox or smoked salmon
2 tbsp chopped fresh dill
Capers for garnish
YOU WILL ALSO NEED

Steps:

  • Preheat the oven to 400 degrees F. Scrub the potatoes clean, leaving the skin intact. Slice the potatoes in half horizontally. Use a vegetable corer or melon baller to scoop out a teaspoon-sized hole in the center of the cut side of each potato half. Place halved potatoes into a large bowl and discard the cored pieces. Toss the potato halves with 1 ½ tbsp olive oil till evenly coated. Brush the baking sheet with the remaining 1 tbsp of olive oil. Put the potatoes onto the baking sheet, cut side down, skin side up. Roast the potatoes for about 30 minutes till tender. Let the potatoes cool to room temperature. Meanwhile put Greek yogurt, cream cheese, lox, and dill into the food processor. Process ingredients until they are blended together. When potatoes are cool, use a small spoon to fill the hollowed out potato halves with the lox mixture. Garnish each potato half with 2-3 capers. Serve. Make Ahead: I'm not a huge fan of refrigerating potatoes (they can sometimes turn mealy), so if you want to make this ahead I recommend making the spread in advance and spreading it on crackers or bagel chips. Still delish, and your prep time will be cut down considerably. Enjoy!

Tips:

  • Use high-quality ingredients: The quality of your ingredients will make a big difference in the final dish. Use fresh, Yukon Gold potatoes, and good-quality lox.
  • Don't overcook the potatoes: The potatoes should be cooked until they are tender but still have a little bit of bite to them. Overcooked potatoes will be mushy and bland.
  • Be careful not to overmix the potato mixture: Overmixing will make the potatoes gluey. Mix just until the ingredients are well combined.
  • Season the potatoes well: Use a generous amount of salt and pepper to season the potatoes. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Garnish the potatoes before serving: Garnish the potatoes with fresh herbs, such as chives, dill, or parsley. You can also add a dollop of sour cream or crème fraîche.

Conclusion:

Baby lox potatoes are a delicious and easy-to-make appetizer that is perfect for any occasion. They are sure to be a hit with your guests!
