BABY BOK CHOY WITH OYSTER SAUCE

Baby Bok Choy with Oyster Sauce image

This recipe is an example of how simplicity can be perfection. Drizzling baby bok choy with a light, but savory sauce after it cooks adds a lovely flavor. Be sure to wash the bok choy well as dirt loves to hide between the leaves!

Provided by Food Network Kitchen

Categories     side-dish

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 9

3 tablespoons oyster sauce
2 teaspoons low-sodium soy sauce
2 teaspoons rice vinegar
1 teaspoon toasted sesame oil
Pinch of sugar
1 1/2 pounds baby bok choy (3- to 4-inch heads), bottoms trimmed
2 tablespoons vegetable oil
3 cloves garlic, roughly chopped
1 tablespoon roughly chopped fresh ginger

Steps:

  • Stir the oyster sauce, soy sauce, rice vinegar, sesame oil and sugar in a bowl until well combined; set aside. Wash the bok choy well to remove any grit and drain in a colander, leaving some water clinging to the leaves. Halve any large heads lengthwise.
  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add half each of the garlic and ginger and cook, stirring, until just softened, about 30 seconds. Add half of the bok choy and stir to coat. Cook until the bok choy is crisp-tender at the stem, 4 to 5 minutes; add water, 1 tablespoon at a time, to keep a bit of moisture in the skillet and prevent the garlic from burning. Remove to a platter.
  • Add the remaining 1 tablespoon vegetable oil to the skillet and repeat with the remaining garlic, ginger and bok choy. When tender, return the first batch of bok choy to the skillet and heat through. Transfer all the bok choy to the platter and drizzle with the sauce.

Tips:

  • Choose tender bok choy: Look for baby bok choy with bright green leaves and crisp white stalks. Avoid any with wilted or yellowed leaves.
  • Wash the bok choy thoroughly: Rinse the bok choy under cold water and separate the leaves from the stalks. Use a sharp knife to remove any tough ends from the stalks.
  • Cook the bacon until crispy: Render the bacon in a large skillet over medium heat until it is crispy and browned. Remove the bacon from the skillet and set aside.
  • Sauté the onion until softened: Add the onion to the skillet and cook over medium heat until it is softened and translucent.
  • Add the bok choy and cook until tender: Add the bok choy to the skillet and cook over medium heat until it is tender and wilted. Stir frequently to prevent the bok choy from burning.
  • Add the butter beans and bacon: Stir in the butter beans and cooked bacon. Season with salt and pepper to taste.
  • Serve immediately: Serve the baby bok choy with bacon, onion, and butter beans over rice or noodles.

Conclusion:

This baby bok choy with bacon, onion, and butter beans is a delicious and easy-to-make side dish. It is packed with flavor and nutrients, and it is sure to be a hit with your family and friends. The combination of crispy bacon, tender bok choy, and creamy butter beans is irresistible. This dish is also a great way to get your kids to eat their vegetables. Serve it over rice or noodles for a complete meal.
