Number Of Ingredients 10

1 tablespoon peanut oil or vegetable oil
2 garlic cloves (minced)
2 shallots (finely chopped)
4 cups low sodium vegetable broth (or chicken broth)
2 tablespoons soy sauce
1 thumb sized piece of ginger (peeled and chopped into very thin strips)
2 dried shiitake mushrooms
2 baby bok choy (chopped bite size)
4 ounces dried rice noodles
sambal oelek or other chili paste (to taste)

Steps:

  • In a large pot over medium heat, add oil, garlic and shallots. Cook for 3-4 minutes, until onions are translucent and garlic is fragrant.

BABY BOK CHOY WITH CHILE, GARLIC, AND GINGER

Baby Bok Choy with Chile, Garlic, and Ginger image

Steaming this popular Chinese vegetable with chile, garlic, and ginger spices up its otherwise subtle essence. We love baby bok choy for its small size and tender leaves, but this recipe can also be made with regular bok choy sliced lengthwise into 1 1/2-inch pieces.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Vegetables     Bok Choy Recipes

Time 25m

Number Of Ingredients 7

2 teaspoons vegetable oil
1 red jalapeno chile, seeded (optional) and thinly sliced
1 garlic clove, thinly sliced
1 piece (1 inch) fresh ginger, peeled and thinly sliced
1 pound baby bok choy, cut in half lengthwise
3 tablespoons water
Coarse salt

Steps:

  • Heat oil in a large skillet over medium-high heat. Cook jalapeno, garlic, and ginger for 1 minute.
  • Add bok choy and water, and steam, tightly covered, until tender, 7 to 8 minutes. Uncover, and cook until any remaining liquid evaporates. Season with salt.

Tips:

  • Prep the Vegetables: Before you start cooking, rinse and trim the baby bok choy, peel and mince the garlic and ginger, and slice the green onions.
  • Use a Good-Quality Broth: A flavorful broth is the foundation of a great soup. Use a homemade chicken or vegetable broth for the best results.
  • Don't Overcook the Vegetables: Baby bok choy cooks quickly, so be careful not to overcook it. It should retain its vibrant green color and crisp texture.
  • Season to Taste: Adjust the seasonings to your preference. Add more salt, pepper, or soy sauce if desired.
  • Serve Immediately: Baby bok choy soup is best served hot, garnished with sliced green onions and a drizzle of sesame oil.

Conclusion:

This baby bok choy soup with garlic and ginger is a simple yet flavorful dish that is perfect for a light lunch or dinner. It is packed with nutrients and can be easily customized to your liking. Whether you prefer a vegetarian or chicken-based soup, this recipe has you covered. So, gather your ingredients, put on your apron, and give this delicious soup a try!
