10 ounces sushi-grade bluefini toro tuna
Sea Salt
Freshly ground black pepper
6 cups mixed baby greens
Matsuhisa Dressing, recipe follows
3/4 cup finely chopped Maui onion
2 tablespoons plus 2 teaspoons soy sauce
2 tablespoons plus 1 teaspoon rice vinegar
2 teaspoons water
1/2 teaspoon sugar
Pinch sea salt
1/4 teaspoon powdered mustard
Pinch freshly ground black pepper
4 teaspoons grapeseed oil
4 teaspoons sesame oil

Steps:

  • Preheat a grill or a broiler.
  • Sprinkle a little sea salt and pepper on the tuna. Briefly sear the tuna on all sides until its surface turns white. Plunge the fish into a bowl of ice water to stop it cooking any further. Shake off the excess water. Cut the tuna into 1/8-inch thick slices. Toss the greens with some of the Matsuhisa dressing and place on a plate. Top with the sliced tuna. 1 cup mayonnaise
2/3 cup sour cream
1/4 cup buttermilk
1 tablespoon fresh lemon juice
1 1/2 teaspoons red wine vinegar
1/2 teaspoon kosher salt (or to taste)
1/3 teaspoon sugar (or to neutralize acidity)
1/3 teaspoon Worcestershire sauce
1 clove mashed garlic
2 ounces crumbled blue cheese
3 tablespoons snipped fresh baby dill
1 teaspoon freshly cracked black peppercorns

Steps:

  • DIVIDE 4 ounces crumbled bleu cheese.
  • COMBINE all of the WHIPPED DRESSING INGREDIENTS in a medium to large bowl: 2 ounces crumbled blue cheese, 1 cup mayonnaise, 2/3 cup sour cream, 1/4 cup buttermilk, 1 tablespoon fresh lemon juice, 1 1/2 teaspoons red wine vinegar, 1/2 teaspoon kosher salt, 1/3 teaspoon sugar, 1/3 teaspoon Worcestershire sauce, 1 clove mashed garlic (use a garlic press).
  • WHIP dressing ingredients with a hand-held mixer on low to medium speed until creamy.
  • ADD the STIRRED DRESSING INGREDIENTS to mixture in bowl: 2 ounces crumbled blue cheese, 3 tablespoons snipped fresh baby dill, 1 teaspoon freshly cracked black peppercorns (or coarse ground black pepper).

4 large oranges peeled
2 pints strawberries
6 oz sweet and spicy pecans
6 oz. pecans
3 T white sugar
1 T chilli Powder
1/2 t. ground chillis

  • Whisk dressing together Mix spiced nuts and roast 10 min. at 350. Mix all together~~

This came from Southern Living -- one of their prize recipes. It takes a little time to prepare -- but most of the prep time can be done well in advance. This is a very special salad and absolutely perfect for a special occasion. I never worry about guests not liking the salad when this is on the menu.

3/4 lb mixed salad green, of your choice
4 ounces blue cheese, crumbled (I prefer Feta cheese)
2 oranges, peeled and thinly sliced
1 pint fresh strawberries, quartered and sliced
1/2 cup balsamic vinegar
3 tablespoons Dijon mustard
3 tablespoons honey
2 garlic cloves, minced
2 small shallots, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup olive oil
1/4 cup sugar
1 cup warm water
1 cup pecan halves
2 tablespoons sugar
1 tablespoon chili powder
1/8 teaspoon ground red pepper

Steps:

  • For the Balsamic Vinaigrette, whisk together all ingredients except olive oil until thoroughly blended. Gradually whisk in olive oil. Makes 1 2/3 cups.
  • For the Sweet and Spicy Pecans, stir together ΒΌ Celsius sugar and warm water until sugar is dissolved. Add pecans; soak for 10 minutes. Drain, discarding syrup. Combine 2 T. sugar. Chili powder, and pepper. Add pecans, tossing to coat. Place pecans on lightly greased baking sheet.* Bake at 350 for 10 minutes, stirring once.
  • To assemble salad: Toss greens with some of the Balsamic Vinaigrette. Arrange on 6 plates. Arrange orange slices, berries, pecans and cheese over greens. Drizzle some additional dressing over salad and serve.
  • If strawberries are not in season, I've substituted kiwi fruit -- I'm sure there are many fruits that you could use.
  • *Note: I always line my baking sheet/pan with parchment paper -- the pecans get pretty sticky while baking and it sure makes the clean-up a snap.
