EASY AND AWESOME SPINACH SALAD
This is a very easy spinach salad to make. The dressing has some unusual ingredients but is very delicious. I never have leftovers at potlucks when I take this salad.

- Place the bacon into a skillet over medium heat, and cook until browned and crisp, turning often, about 10 minutes. Transfer the bacon to paper towels to absorb excess grease. Crumble the bacon when cool.
- Place the spinach into a large salad bowl, and sprinkle with the bacon, hard-cooked eggs, and onion. Gently toss the salad.
- In a bowl, whisk together the sugar, ketchup, vegetable oil, vinegar, and Worcestershire sauce until the sugar has dissolved. Pour the dressing over the salad, and toss thoroughly to combine all ingredients.

AWESOME SPINACH SALAD
This recipe was given to me by a lovely lady in my church, Dee Makepeace, who is an amazingly good cook. I'm not much of a salad eater, but this one I like. ALOT! LOL! Now I bring it to potlucks and family get togethers not just because it tastes delicious, but because it is a very pretty salad and makes a great presentation.

- 1. In small saucepan saute the almonds and the brown sugar until the sugar is melted and almonds are coated nicely with the sugar and set aside. When cool break apart. Watch carefully as can burn very quickly. I like them very sugary so I use the 4 tbs.of sugar but Dee Makepeace's original recipe called for 2 so it's up to you, LOL
- 2. Layer the spinach, cheese, onion, oranges, and the sugar coated almonds in a large bowl or casserole dish.
- 3. For the Dressing: Mix in a plastic bowl with a lid so you can shake the container to mix (works best I think)mix together the sugar, vinegar, salt, minced onion, poppy seeds, and the vegetable oil. Shake to mix and drizzle over salad. I never use the whole amount as I don't like heavily dressed salads. I find that there is more than enough dressing to make 2 salads out of it. Also if you are taking this salad somewhere it is best to put the dressing on after you get there or it can look a bit wilty.
Tips:
- For the best flavor, use fresh, baby spinach. If using regular spinach, be sure to wash and dry it thoroughly.
- To add extra crunch to the salad, try adding some chopped walnuts or almonds.
- If you don't have any red onion on hand, you can use a yellow or white onion instead.
