Easy and Awesome Spinach Salad image

This is a very easy spinach salad to make. The dressing has some unusual ingredients but is very delicious. I never have leftovers at potlucks when I take this salad.

4 slices bacon, or more to taste
1 (16 ounce) bag fresh spinach, stems removed
2 hard-cooked eggs, chopped
1 small red onion, finely chopped
½ cup white sugar
⅓ cup ketchup
¼ cup vegetable oil
¼ cup vinegar
2 teaspoons Worcestershire sauce

Steps:

  • Place the bacon into a skillet over medium heat, and cook until browned and crisp, turning often, about 10 minutes. Transfer the bacon to paper towels to absorb excess grease. Crumble the bacon when cool.
  • Place the spinach into a large salad bowl, and sprinkle with the bacon, hard-cooked eggs, and onion. Gently toss the salad.
  • In a bowl, whisk together the sugar, ketchup, vegetable oil, vinegar, and Worcestershire sauce until the sugar has dissolved. Pour the dressing over the salad, and toss thoroughly to combine all ingredients.

A wonderful salad that could be a meal or a 1st course. I've had it for both and could have licked the plate!

Number Of Ingredients 12

16 ounces fresh spinach
1 lb fresh strawberries, hulled and halved
1 tablespoon chopped red onion
1/4 cup of roasted pecan pieces, sprinkled with a little brown sugar when roasting... (about 5-7 minutes at 350 degrees, then cool)
brown sugar
1/8-1/4 cup crumbled feta cheese
1 teaspoon Worcestershire sauce
1/2 cup sugar
1/2 cup oil
1/4 cup red wine vinegar
1/4 teaspoon paprika
1 tablespoon poppy seed

Steps:

  • Mix Dressing ingredients together in a jar and shake to meld flavors together.
  • Mix salad ingredients together.
  • Add Dressing to salad and serve.

This recipe was given to me by a lovely lady in my church, Dee Makepeace, who is an amazingly good cook. I'm not much of a salad eater, but this one I like. ALOT! LOL! Now I bring it to potlucks and family get togethers not just because it tastes delicious, but because it is a very pretty salad and makes a great presentation.

Number Of Ingredients 12

1 large pkg baby spinach
1/2 c shredded mozzarella cheese
1/4 c finely chopped onion, i like to use green onions, but dee makepeace used regular white onions
16 oz can of manderin oranges (you can use sliced strawberries, blueberries etc if you like
1/2 c sliced almonds
2-4 Tbsp brown sugar
1/3 c sugar
5 Tbsp vinegar, i like to use apple cider vinegar but dee makepeace used plain white vinegar
1 tsp salt
1 1/2 tsp minced onion
1 1/2 tsp poppy seeds
1 c vegetable oil

Steps:

  • 1. In small saucepan saute the almonds and the brown sugar until the sugar is melted and almonds are coated nicely with the sugar and set aside. When cool break apart. Watch carefully as can burn very quickly. I like them very sugary so I use the 4 tbs.of sugar but Dee Makepeace's original recipe called for 2 so it's up to you, LOL
  • 2. Layer the spinach, cheese, onion, oranges, and the sugar coated almonds in a large bowl or casserole dish.
  • 3. For the Dressing: Mix in a plastic bowl with a lid so you can shake the container to mix (works best I think)mix together the sugar, vinegar, salt, minced onion, poppy seeds, and the vegetable oil. Shake to mix and drizzle over salad. I never use the whole amount as I don't like heavily dressed salads. I find that there is more than enough dressing to make 2 salads out of it. Also if you are taking this salad somewhere it is best to put the dressing on after you get there or it can look a bit wilty.

Tips:

  • For the best flavor, use fresh, baby spinach. If using regular spinach, be sure to wash and dry it thoroughly.
  • To add extra crunch to the salad, try adding some chopped walnuts or almonds.
  • If you don't have any red onion on hand, you can use a yellow or white onion instead.
  • For a tangy dressing, use a combination of lemon juice and balsamic vinegar. You can also add a touch of honey or maple syrup to sweeten the dressing.
  • If you're looking for a heartier salad, try adding some grilled chicken or salmon.
  • Serve the salad immediately after dressing it, so that the spinach doesn't wilt.
