AWESOME CONEY SAUCE

Awesome Coney Sauce image

I love a good hotdog, and one covered in Coney sauce is even better. Okay, I know that there are a lot of Coney sauce recipes out there in the wide world; and, although people associate Coney with Coney Island, the original Coney sauce came about in the Detroit area in the early part of the last century. It then spread to the...

Time 3h20m

Number Of Ingredients 9

3 lb finely ground sirloin
1 1/2 c cold water, or beef stock
8 oz tomato sauce, plain
6 Tbsp chili powder
3 medium onions, finely chopped
2 tsp garlic, minced, or 1 teaspoon powder
1 tsp hot sauce (franks)
1 tsp salt, or to taste
1 tsp black pepper, freshly ground

Steps:

  • 1. Chef's Note: There are two secrets to the traditional sauce: a minimum of ingredients, and the cut of the ground beef. As one vendor I talked to on Coney Island said to me: If you want to add extra onions, mustard, beans, whatever... Go for it, but the sauce is the sauce, pure and simple (a man of few words). In truth, keeping the ingredients to a minimum makes this an ideal sauce for a variety of things: For example, it's an excellent sauce for a chili/cheese burger.
  • 2. Start by finely chopping the onions. Chef's Tip: The easiest way to do this is to use the large holes on a box grater. In addition, when you grate an onion, it will release a lot of moisture from the ruptured cell walls, and I usually pick up some of that excess liquid by laying the grated onion on a few sheets of paper towels.
  • 3. Have your other ingredients close at hand.
  • 4. Add the cold water (or stock) to a skillet, and then add the grated onions, and the ground beef. Chef's Note: This ground sirloin is not your typical grind... it's called a triple grind by your butcher. What I usually do is take regular grind and put it into my food processer for a couple of spins. The result is a very finely ground beef, and that is one of the secrets of this sauce.
  • 5. Chef's Historical Note: According to the historical record, the recipe used ground beef heart, which is then ground to a consistency of fine-ground beef... not ground sirloin.
  • 6. Simmer the onion and beef over medium-to-medium-high heat until thoroughly cooked, and the onions are soft, about15 minutes.
  • 7. Add the remaining ingredients, and slow simmer, uncovered, until it thickens, about 2 to 3 hours. Chef's Tip: I like Maxine's chili powder, but it's hot, so I usually use only 4 tablespoons. Actually, the chili powder will really make this sauce... Chef's Note: If it begins drying out, add a bit of water, or broth.
  • 8. Chef's Tip: If you are using beef stock, as opposed to plain water, then you might want to leave out the additional salt.
  • 9. Well, that's about it... get yourself a dog or two, and have at it. What are you waiting for...
  • 10. One more thing: If you are a purest, and you want the "real" experience, then you need the right hotdog, and that's from the Koegel Meat Company in Flint, Michigan. Keep the faith, and keep cooking...

AWESOME PRETZEL CHICKEN TENDERS WITH SPICY HONEY DIJON SAUCE

Awesome Pretzel Chicken Tenders with Spicy Honey Dijon Sauce image

Provided by Guy Fieri

Categories     appetizer

Time 6h45m

Yield 8 servings

Number Of Ingredients 18

3 pounds chicken tenders or boneless skinless breast cut into 1 1/2-inch strips
2 cups buttermilk
2 tablespoons dried basil
2 tablespoons dried oregano
2 tablespoons granulated garlic
3/4 teaspoon salt
2 teaspoons pepper
3/4 teaspoon red pepper flakes
1 1/2 cup smoked almonds
12 large sourdough hard pretzels
Canola oil, for frying
Spicy Honey Dijon Sauce, recipe follows
large resealable plastic bag
1/2 cup Dijon mustard
1/4 cup honey
1 chipotle peppers in adobo sauce
2 teaspoons adobo sauce (optional)
1 teaspoon cider vinegar

Steps:

  • In a small bowl, combine basil, oregano, granulated garlic, salt, pepper and red pepper flakes. Place buttermilk and half the spice mix into a double-lined resealable plastic bag. Add chicken and massage bag until well coated. Refrigerate 6 to 12 hours. Reserve remaining spice mix.
  • Place almonds in plastic bag. Break up with rolling pin or mallet (flat side) until mixture looks part rough chopped part crumbs. Remove almonds and place into shallow bowl. Put pretzels in same bag and mash with mallet or rolling pin until it looks like a mixture of large breadcrumbs and powder. Add to almonds mix to combine.
  • In a large fry pan, pour canola oil until it measures about 1 1/2 -inches high in pan. Heat over high, until oil is hot, but not smoking, temperature, 350 degrees.
  • Remove tenders from buttermilk and dredge in almond-pretzel mixture, pressing mixture into the tenders. Gently add tenders, in batches, to the oil. Be sure not to over crowd the pan. Fry tenders until they are dark golden brown, being careful not to burn, about 5 minutes or until cooked through. Remove and drain on a cookie sheet lined with a wire rack. Serve immediately with Spicy Honey Dijon Sauce or keep warm in a 200 degree F oven.
  • In a small food processor, combine all ingredients. Refrigerate until ready to use.

ABSOLUTELY AWESOME HOTDOG CHILI SAUCE

Absolutely Awesome Hotdog Chili Sauce image

I was craving a chilidog, but not the usual type of dog... So, I went into the test kitchen, and came up with this "Kicked Up" chili sauce. The chorizo takes the flavors of this chili to South-of-the-Border, while the remaining ingredients and spices pull it back north into middle Texas. Let's call that my geographical...

Provided by Andy Anderson !

Categories     Beef

Time 2h15m

Number Of Ingredients 15

PLAN/PURCHASE
8 oz ground chorizo
10 oz ground chuck 80/20
1 c beef or chicken stock, not broth (i prefer chicken stock)
1 medium yellow onion, finely chopped, about 1.5 cups
2 clove garlic, minced
2 Tbsp chili powder, hot or mild, your choice
1 tsp ground cumin
1 pinch ground cinnamon (just a small pinch)
1 Tbsp dehydrated onions (optional)
8 oz tomato sauce
1 c filtered water
1 tsp hot sauce (i prefer frank's)
salt, kosher variety, to taste (very optional)
black pepper, freshly ground, to taste (optional)

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients.
  • 3. Add the chorizo and chuck to a large heavy-bottomed saucepan over medium heat.
  • 4. Cook until the meat is no longer pink, about 5 - 7 minutes.
  • 5. Add the chopped onions, and the garlic.
  • 6. Cook until the onions soften, about 5 - 7 minutes.
  • 7. Remove any grease by straining the meat.
  • 8. Return the meat to the saucepan, and then add the beef or chicken stock.
  • 9. Reduce heat to medium low, and simmer until the liquid is reduced by about half, about 30 minutes.
  • 10. Mix in the chili powder, ground cumin, dehydrated onions, and the cinnamon, and then allow it to cook, while stirring, for an additional 2 minutes.
  • 11. Chef's Tip: The cinnamon really blooms this sauce, but I'm serious when I mean just a pinch... A little goes a long way.
  • 12. Chef's Note: The dehydrated onions are optional; however, they add another dimension of flavor to the chili. Je Ne Sais Quoi
  • 13. Mix in the tomato sauce, water, and hot sauce.
  • 14. Place the heat to low, and allow the sauce to slowly simmer until the liquid is reduced by about half, and the sauce begins to thicken, about 60 - 90 minutes.
  • 15. Chef's Note: You want the heat so low that there is barely any movement in the saucepan... Low and slow is the way to go. If you go any higher you'll burn the sauce. So, just gently caress the saucepan with the heat.
  • 16. Chef's Tip: Now is the time to add any additional seasoning (salt, pepper, etc.). But be careful with the salt... since this sauce is being reduced, spices like salt will only become more concentrated as time passes. I find that the sauce really doesn't need any salt.
  • 17. PLATE/PRESENT
  • 18. Get out your best doggie and ladle on the sauce... so yummy. Enjoy
  • 19. Keep the faith, and keep cooking.

AWESOME HONEY BACON BOURBON BBQ SAUCE

Awesome Honey Bacon Bourbon BBQ Sauce image

On New Year's Eve I always serve my smoked pork ribs, slathered in my homemade BBQ sauce. I have clients that will never use any other BBQ sauce, and so I usually make this sauce by the...

DRY SPICES
1 Tbsp dark brown sugar
1 Tbsp smoked paprika
2 Tbsp chili powder
1 Tbsp ground yellow mustard
1 Tbsp dried sage
1/2 tsp cayenne powder (totally optional)
1 tsp salt, kosher variety
THE SAUCE
8 oz smoked bacon, rough chopped
1 medium yellow onion, rough chopped
4 clove garlic, rough chopped
1 large shot of good bourbon
1/2 c coffee, brewed
1/2 c espresso, brewed
2 Tbsp fresh honey
1 c ketchup, homemade, if possible
1 Tbsp soy or tamari sauce

Steps:

  • 1. Gather your dry ingredients.
  • 2. Gather your sauce ingredients.
  • 3. Rough chop the bacon, onion, & the garlic.
  • 4. Chef's Note: What's a rough chop. A rough chop is when the veggies need to be cut up but they are not a part of the presentation of the dish.
  • 5. Chef's Note: Take a nice big swig of the bourbon... just to make sure it's fresh.
  • 6. Place a skillet over medium heat, and then add the bacon.
  • 7. Cook, stirring regularly, until the bacon begins to brown, but not burn, about 8 to 10 minutes.
  • 8. Add the onion and garlic to the skillet.
  • 9. Continue to cook and stir, until the onions have softened, about 8 to 10 minutes.
  • 10. Add all of the dry ingredients.
  • 11. Chef's Note: The cayenne sends this sauce into the hot category. You can cut that down to a small pinch, or leave it out altogether. When I leave it out, I usually add a bit of cumin as a substitute.
  • 12. Stir until they are combined into the bacon/onion mixture.
  • 13. Chef's Note: Take another swig of the bourbon... just to make sure it's still fresh.
  • 14. Deglaze the pan with a generous splash of bourbon (a nice large shot).
  • 15. Immediately take the pan off heat.
  • 16. Add the contents of the pan to a blender or stand mixer.
  • 17. Add the coffee, espresso, ketchup, honey, and soy sauce.
  • 18. Chef's Note: When I talk about using ketchup in this recipe, I would really hope you choose a homemade variety. Otherwise you are making a condiment out of a condiment. Besides, store-bought ketchup has things in it, other than ketchup. Go homemade... if you can. https://www.justapinch.com/recipes/sauce-spread/other-sauce-spread/versatile-homemade-ketchup.html?r=1
  • 19. Blend until completely smooth.
  • 20. Store in a glass airtight container, and refrigerate until ready to use. Enjoy.
  • 21. Keep the faith, and keep drinking... err cooking.

INCREDIBLY AWESOME NO FAIL SPAGHETTI SAUCE

Incredibly Awesome No Fail Spaghetti Sauce image

This recipe came about through a lot of trial and error. My guinea pigs...I mean my family and friends finally gave it two thumbs up this week when we had it for Christmas Eve. It makes a lot so I freeze the leftovers and use it either for another course of spaghetti or for lasagne. I start this around 9 a.m. and we eat at 6 p.m. You really don't have to simmer it as long as I do, but it really marries the flavors. The longer the simmer the better the taste! It could be made the night before and heated through, refrigerated, then thrown in a crock pot on low all day. Or the morning of, then either simmer on the stove top or in the crock pot. If planning to simmer on the stove, make sure you use a large, heavy, thick bottomed pan. Adjust the garlic to your taste. By smashing the garlic before you mince it, the skin comes right off and you release the oils and more flavor. When it comes to the tomatoes and the sauce, try to use the unseasoned. The beef broth adds a depth to the sauce. Cook time is for the shortest time it should be simmered.
