4+ BIG mushrooms - like portobello, BBQ flat mushrooms ((20% larger than buns, or buy multiple per burger) (Note 1))
30g / 2 tbsp unsalted butter
2 garlic cloves (, finely minced)
1/2 tsp each salt and pepper
1/2 tbsp olive oil
4 slices swiss cheese ((or any other cheese slice of choice))
3 onions (, cut into 0.7cm / 1/3" rings)
1 tbsp olive oil
1/4 tsp each salt and pepper
2/3 cup mayonnaise (or sour cream + pinch of salt)
2 tbsp ketchup
1 - 3 tsp Sriracha ((adjust spiciness to taste))
4 buns or rolls ((I like brioche))
8 - 12 lettuce leaves
2 tomatoes
French fries
Baked potato wedges

Steps:

  • Preheat oven to 220°C/450°F (200°F fan).
  • Garlic butter: Place butter, garlic, salt and pepper in a heatproof jug. Microwave to melt butter, then stir.
  • Brush with butter: Brush the mushroom cap with butter (smooth side), then place on a tray gills side up (ie stalk facing up). Brush remaining butter onto the rims and gills, being sure to scrape up all the garlic in the jug.
  • Olive oil: Drizzle with olive oil.
  • Roast 25 minutes, then flip mushrooms. Brush with tay juices, roast a further 10 minutes or until the centre of the mushrooms are tender. {Meanwhile, cook onion, mix Sauce)
  • Top with cheese: Place a slice of cheese on each mushroom, return to oven for 3 minutes just to melt the cheese.

1 pound ground beef
1/3 cup breadcrumbs (fresh or dried)
1/4 cup milk
1 1/2 teaspoons Worcestershire sauce (DIVIDED)
1 teaspoon dried parsley
1 teaspoon yellow mustard (OR Dijon mustard) (DIVIDED)
1/2 teaspoon salt (plus additional for gravy)
Freshly ground black pepper (to taste)
2 cups low-sodium beef broth
2 teaspoons tomato paste (OR ketchup)
1/2 teaspoon beef bouillon base (such as organic Better Than Bouillon) (optional)
4 tablespoons butter (DIVIDED)
8 ounces white mushrooms (sliced)
3 cloves garlic (minced)
3 tablespoons all-purpose flour

Steps:

  • In a large bowl, thoroughly combine the ground beef, breadcrumbs, milk, 1 teaspoon Worcestershire sauce, parsley, 1/2 teaspoon mustard, 1/2 teaspoon salt, and black pepper. Form into 8 equally sized balls and flatten into patties. Set aside.
  • Pour beef broth into a large measuring cup. Whisk in the tomato paste, remaining 1/2 teaspoon mustard, beef bouillon base, and remaining Worcestershire sauce until smooth. Set aside.
  • Heat a large, deep pan or skillet over medium-high heat. Add 1 tablespoon butter to pan and swirl to coat. Add the beef patties, cook 3 to 4 minutes on first side until well-browned, and flip, taking care to scrape the browned bits from the bottom of the pan when you flip. Cook patties for 3 minutes on the second side or until the ground beef is cooked through in the center. Remove the patties to a paper-towel lined plate, cover to keep warm, and set aside.
  • Pour the grease from the pan and add the remaining 3 tablespoons butter to the pan. Melt and swirl the butter over medium high heat. Add the mushrooms and sauté for 4 minutes, stirring occasionally and scraping/deglazing the bottom of the pan. Stir in the garlic and cook for 1 minute. Sprinkle the flour over the mushroom mixture and continuously stir while cooking for 1 more minute.
  • Gradually stir in the broth mixture. Bring to a boil and cook for 1 to 3 minutes or until the gravy has thickened to your desired consistency. Reduce the heat, add the cooked beef patties back to the pan, and submerge in the gravy. Cook for another couple of minutes until they are heated through.

Hot cooked mashed potatoes

Steps:

  • In a large bowl, combine the egg, bread crumbs, 2 tablespoons soup mix and pepper. Crumble beef over mixture and mix well. Shape into four patties. , In a large cast-iron or other heavy skillet, cook patties over medium heat until a thermometer reads 160°, and juices run clear, 4-5 minutes on each side. 2 tablespoons olive oil
3 (8 ounce) packages sliced fresh mushrooms
½ onion, finely chopped
4 cloves garlic, minced
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon dried oregano
⅔ cup rolled oats
¾ cup dry bread crumbs
2 eggs, beaten
½ cup freshly shredded Parmigiano-Reggiano cheese
2 tablespoons olive oil

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium heat; add mushrooms, onion, and garlic to the hot oil and season with salt, black pepper, and oregano. Cook and stir mushroom mixture until mushrooms have given up their juice and the juice has almost evaporated, about 10 minutes. Transfer cooked mushrooms to a cutting board and chop into small chunks with a knife.
  • Transfer mushrooms to a large bowl. Mix in rolled oats and bread crumbs; taste for salt and black pepper and add more to taste. Stir Parmigiano-Reggiano cheese into the mixture, followed by eggs. Let mixture stand for the crumbs to soak up excess liquid, about 15 minutes. (At this point you can refrigerate the mixture to cook later if desired.) Moisten hands with a little vegetable oil or water, pick up about 1/4 cup of mixture, and form into burgers.
  • Heat remaining 2 tablespoons olive oil in a skillet over medium heat and pan-fry burgers until browned and cooked through, 5 to 6 minutes.

A wonderful main dish using fortune cookies that can be bought in most stores or picked up at any Chinese restaurant for a small amount of money.

1 lb ground beef
1/2 c ground fortune cookies
2 Tbsp beefy or regular dry onion soup mix
1/2 tsp salt
1/2 tsp ground black pepper
1 large egg
4 oz can of mushrooms
1 3/4 c cold water
1/2 tsp chopped garlic
1 tsp worcestershire sauce
3 Tbsp flour
4 Tbsp heavy cream, half and half or milk

Steps:

  • 1. Mix the ground beef, ground fortune cookies, two tablespoons of the onion soup mix, salt, pepper and egg in a large bowl. Set aside remaining soup mix for later use in gravy. Form this mix into 8 hamburger patties.
  • 2. Cook hamburger patties in a skillet over medium heat until done...about 4 to 5 minutes per side. Set aside to rest.
  • 3. In a small pan or skillet, combine the remaining onion soup mix, garlic, Worcestershire sauce and flour. Drain the mushroom juice from the can into a measuring cup and add the mushrooms to the pan. Add enough water to the mushroom juice to make 1 and 3/4 cups of liquid. Add to the pan. Bring to a boil while stirring. Lower the heat to medium and stir until thickened. Add heavy cream, salt and pepper to taste and re-thicken by cooking slightly longer.
  • 4. Pour gravy over burgers and mashed potatoes and serve with a vegetable.
