With the warm weather coming I was searching for a different burger recipe. I first thought this sounded really odd with rolled oats in the ingredients but combining it with milk makes for a moist pattie with a great texture. I made a few small changes to a recipe I found in the cookbook All Fired Up

1 lb lean ground beef
1 small onion, minced
1 egg, beaten
1/3 cup rolled oats
1 tablespoon steak sauce
2 tablespoons milk
fresh ground pepper

Steps:

  • In bowl combine ingredients.
  • Shape into 4 equal burgers, putting finger indentation almost through burger in the middle of each pattie-Do not over handle meat- usually meat is done when the indentation in center is filled in.
  • Place on preheated grill and cook about 5 min.
  • per side or until no longer pink.
  • Garnish as desired.

This is a great Labor Day, 4th of July, or Family BBQ burger recipe. It is very easy and can be done on the Grill or a good size Foreman. Jut make sure you make the burgers thin and wide enough because of the shrinkage that happens when being cooked.

2 1/2 lbs ground beef (chuck)
16 ounces cream cheese
1 ounce McCormick grill seasoning (packet)
1 ounce ranch dressing mix (packet)
4 tablespoons Bacos bacon bits
2 tablespoons garlic powder
2 tablespoons jalapenos (diced)

Steps:

  • Take cream cheese, grill seasoning, ranch seasoning, bacos, garlic powder, jalapeno, and mix together in a big bowl.
  • Create 16 burger pattyies thin and wide.
  • Take one patty, put a little ball of the mix in the center, then take another patty and seal the edges all around.
  • This makes 8 patty's grill to your desired taste.

8 oz boneless, skinless chicken breast
1/4 c shredded carrots
1 green onion, minced - green tops too
1 clove garlic, minced
1 Tbsp soy sauce
1 tsp ginger paste
1 tsp sesame oil
1/2 Tbsp rice vinegar
salt & pepper
tomato slices, red cabbage shredded, cucumber sliced thin - these are just what i used, you can use whatever you prefer
toasted buns or i used toasted french bread
SAUCE
1 1/2 Tbsp sour cream
1 Tbsp mayonnaise
1/2 Tbsp soy sauce
1/4 tsp sriracha sauce or less if preferred
1/2 Tbsp brown sugar
1/4 tsp sesame oil
1/2 tsp dijon mustard

Steps:

  • 1. Make sauce : Whisk all sauce ingredients until smooth. Cover & refrigerate until ready to use.
  • 2. In a food processor, add chicken breast and pulse until chicken is ground. ( Or can buy already ground chicken. ) Place in a small bowl. Shred carrots, green onion and garlic in food processor. Add to chicken. Next, add the ginger, soy, sesame oil, ginger, vinegar and mix until well blended.
  • 3. The chicken burgers can either be grilled or broiled. If grilling you will need a grill pan as it is a loose mixture. Spray the grill pan, divide meat mixture in half, shape patties once on the pan. Salt and pepper. Place on rack over medium heat on grill and cook for 6 minutes, then flip to other side and cook another 6 minutes or until juices run clear.
  • 4. I broiled mine today. Spray broiler pan with non stick cooking spray and divide meat mixture in half and pat out meat mixture in the shape of a patty once on pan. Salt & pepper. Place rack in oven about 4 - 6 inches below heat. Cook for 6 - 8 minutes on one side and flip to the other and finish cooking until juices run clear.
  • 5. Butter your bread or bun and toast either on grill or in broiler - I toasted mine right beside the patties. Spread sauce on bottom and top pieces of bread or bun. Add desired condiments. Enjoy! So good!

A great recipe from the Splendid Table. Not your typical dry, flavorless turkey burger. These are moist and full of flavor! Recipe doubles easily and they are great on the grill! We like to serve them with sweet potato fries.

1 medium onion, thinly sliced
1/2 cup grape tomatoes, halved
1 large garlic clove, thinly sliced
4 tablespoons extra virgin olive oil, divided
salt & freshly ground black pepper
1/2 lb ground turkey
2 tablespoons dry white wine or 2 tablespoons dry red wine
1 -2 ounce extra-sharp cheddar cheese, cut into 1/4- to 1/2-inch cubes (optional)
2 large whole grain buns

Steps:

  • Put 2 tablespoons of the olive oil in a 10-inch nonstick skillet and heat over high. Add onions and tomatoes with generous sprinkles of salt and pepper. Sauté over high, stirring frequently, until onions begin to brown.
  • Add garlic and cook until onions are wilted and soft. Remove from heat. Set aside half the onion mixture for topping burgers.
  • Blend ground turkey with remaining onion mixture, 1/4 teaspoon salt and 1/8 teaspoon pepper. Shape into 2 balls.
  • Make a deep hole with your thumb and insert half of the cheese into each ball. Pinch hole closed and flatten ball into 3/4- to 1-inch thick patties with no sign of cheese on the outside. Patties will be very soft and sticky.
  • Heat remaining 2 tablespoons olive oil in a 10-inch nonstick skillet over medium high. Sear burgers about 30 seconds on each side until browned.
  • Lower heat to medium-low and cook about 5 minutes per side, or until there is no pink at center of burger and an instant-read thermometer measures at least 150 degrees
  • These burgers can also be grilled if you prefer.
  • Serve hot on buns, topping with reserved onions and your favorite condiments.

A wonderful main dish using fortune cookies that can be bought in most stores or picked up at any Chinese restaurant for a small amount of money.

1 lb ground beef
1/2 c ground fortune cookies
2 Tbsp beefy or regular dry onion soup mix
1/2 tsp salt
1/2 tsp ground black pepper
1 large egg
4 oz can of mushrooms
1 3/4 c cold water
1/2 tsp chopped garlic
1 tsp worcestershire sauce
3 Tbsp flour
4 Tbsp heavy cream, half and half or milk

Steps:

  • 1. Mix the ground beef, ground fortune cookies, two tablespoons of the onion soup mix, salt, pepper and egg in a large bowl. Set aside remaining soup mix for later use in gravy. Form this mix into 8 hamburger patties.
  • 2. Cook hamburger patties in a skillet over medium heat until done...about 4 to 5 minutes per side. Set aside to rest.
  • 3. In a small pan or skillet, combine the remaining onion soup mix, garlic, Worcestershire sauce and flour. Drain the mushroom juice from the can into a measuring cup and add the mushrooms to the pan. Add enough water to the mushroom juice to make 1 and 3/4 cups of liquid. Add to the pan. Bring to a boil while stirring. Lower the heat to medium and stir until thickened. Add heavy cream, salt and pepper to taste and re-thicken by cooking slightly longer.
  • 4. Pour gravy over burgers and mashed potatoes and serve with a vegetable.

1 dash of Worcestershire sauce
Black pepper, to taste

Steps:

  • Preheat the grill or broiler. Combine all ingredients and mix well by hand. Either divide mixture into patties or use a hamburger press. Grill until cooked through, 7 to 10 minutes per side.

1 stick celery diced
1/2 large green pepper diced
3 large fresh mushrooms chopped

1/4 c plain breadcrumbs
1 large egg
6 slice pepper jack cheese
1/4 tsp pepper

PLAN/PURCHASE
THE BURGERS
3 c cooked white or brown rice, i prefer white
15 oz baked beans, 1 can
4 c sunflower seeds, raw
1 c chopped parsley
1 medium fresh carrot, grated
2 tsp salt, kosher variety
1 tsp dehydrated onions, ground to a powder, or 1/2 teaspoon onion powder
1/2 tsp ground cumin
1/2 Tbsp sweet paprika
THE TOPPING (PER BURGER)
1 Tbsp vegetarian mayonnaise
1 tsp yellow mustard
1 tsp creamy brown mustard, like grey poupon
1 tsp hot sauce, i prefer frank's

Steps:

  • 1. PREP/PREPARE
  • 2. You will need a blender, or food processor fitted with an S-Blade to make this recipe.
  • 3. The beans are an important element in the flavor of these burgers. I make my own (I will share the recipe in a bit); however, when it comes to canned beans, some of my absolute favorite ones are Bush's Baked Beans. Those folks know how to make 'em tasty.   • 4. Gather your ingredients (mise en place).
  • 5. Cook the rice according to package directions, and then allow to cool.
  • 6. Add the beans to a large bowl, and crush with a fork. Do not turn them into mush... leave some bits.
  • 7. Place the sunflower seeds into a blender/food processor, and blend until fine, but do not blend to the point that it becomes a paste. Trust me, it does not take long for that to happen.
  • 8. Add the remaining ingredients, but not the rice, and use one-second pulses until everything is nicely combined.
  • 9. Add the blended ingredients, along with the rice into the large bowl with the beans, and mix with wet hands until combined, then shape into burger patties.
  • 10. If you are making sliders, you will probably get about 20; if you are doing full-size patties, you will probably get about 8.
  • 11. You can stick these into a 370f (188c) oven until they begin to brown, about 12 - 14 minutes, or you could fry them up in a pan with a bit of oil.
  • 12. PLATE/PRESENT
  • 13. Mix the dressing together, if using, and spread it over the burger before serving. Enjoy.
  • 14. Keep the faith, and keep cooking.

Tips:
