1/2 teaspoon cumin
1/2 teaspoon cinnamon
salt and pepper
chopped parsley

Steps:

  • In a large saute pan, heat oil to med-high.
  • Cook pork chops until browned on both sides, and almost cooked through; remove from pan; set aside.
  • Over med heat, cook onion, garlic, apple, and red pepper strips for 2 minutes, or until softened.
  • Blend chicken stock with cornstarch; add to pan along with curry powder, cumin and cinnamon; cook for 1-2 minutes, or until slightly thickened.
  • Return pork chops to frypan; adjust seasoning with salt and pepper.
  • Cook for 1-2 minutes, or until heated through.
  • Serve pork chops with sauce, and sprinkle with fresh parsley.
  • Note: this recipe serves 4 people, if desired, all the ingredients can be doubled to feed more.

Tips:

  • Select the right pork: Pork shoulder or pork butt is the best cut for this curry as it has a good amount of fat that will render and add flavor to the dish.
  • Use fresh apples: Fresh, crisp apples add a nice sweetness and tartness to the curry. Granny Smith or Honeycrisp apples are good choices.
  • Don't overcook the pork: Pork should be cooked until it is tender but not dry. Overcooking will make the pork tough.
  • Use a good quality curry powder: A good quality curry powder will make a big difference in the flavor of the curry. Look for a curry powder that is fresh and has a vibrant color.
  • Serve with rice or naan: Curry is traditionally served with rice or naan. Rice is a good option for absorbing the curry sauce, while naan is a good option for dipping in the curry sauce.

Conclusion:

Apple and pork curry is a delicious and easy-to-make dish that is perfect for a weeknight meal. The curry is made with tender pork, fresh apples, and a flavorful curry sauce. It can be served with rice or naan and is sure to be a hit with the whole family.
