I came up with this recipe when I was unable to find exactly what I was looking for in my cookbooks. I hope you enjoy it as much as we did!

Number Of Ingredients 15

1 small zucchini (chopped finely)
1/2 of a yellow onion (chopped finely)
1/2 of a red bell pepper (chopped finely)
3 garlic cloves (chopped finely)
1 teaspoon salt
3 dashes pepper
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
cooking spray
1 lb lean ground beef
1 egg
1 teaspoon salt
1/4 teaspoon pepper
1 (8 ounce) can tomato sauce with basil garlic and oregano (divided)

Steps:

  • Spray a skillet with cooking spray.
  • Add the first nine ingredients and saute for 10 minutes on medium heat. Allow to cool to room temperature (put in the frig to speed things up).
  • In a large bowl mix ground beef, egg, salt, pepper, 1/2 of the tomato sauce, and the vegetable mixture.
  • Pat into 7 small meatloaves and place on foil lined baking sheet that has been sprayed with cooking spray.
  • Top each loaf with the remaining tomato sauce.
  • Bake at 350 for 30 minutes.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

1 tablespoon olive oil
1 green bell pepper, diced
½ cup diced sweet onion
½ teaspoon minced garlic
1 pound extra-lean (95%) ground beef
1 cup whole wheat bread crumbs
2 large eggs
¾ cup shredded carrot
¾ cup shredded zucchini
salt and ground black pepper to taste
¼ cup ketchup, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Heat olive oil in a skillet over medium heat; cook and stir green bell pepper and onion in the hot oil until onion is transparent and bell pepper is softened, 5 to 10 minutes. Add garlic and cook until fragrant, 1 to 2 minutes.
  • Combine ground beef, bread crumbs, eggs, carrot, zucchini, salt, pepper, and bell pepper mixture in a large bowl; mix well using your hands. Press meat mixture into the prepared loaf pan.
  • Bake in the preheated oven until no longer pink in the center, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Spread ketchup on the top of the meatloaf and continue baking until bubbling, about 5 minutes more.

1 large sweet red pepper, chopped
3 garlic cloves, minced
1 tablespoon olive oil
1 cup dry bread crumbs

1 teaspoon salt

1/2 teaspoon ground cumin
1/2 teaspoon pepper
1 can (14-1/2 ounces) diced tomatoes with mild green chiles, divided
1/3 cup plain yogurt
1 large egg, lightly beaten
2 pounds lean ground beef (90% lean)

  • In a large nonstick skillet, saute the onion, red pepper and garlic in oil until tender. Transfer to a large bowl.
