1 lb ground beef or 1 lb ground turkey
2 onions, diced
1 green pepper, diced
1 tablespoon jalapeno, finely chopped
1 (14 ounce) can Mexican-style tomatoes (like Rotel)
2 (8 ounce) cans tomato sauce
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika (smoked if you can find it)
1 (14 ounce) can kidney beans, drained and rinsed
1 (14 ounce) can black beans, drained and rinsed
1 cup water
sour cream
cheddar cheese
green onion

Steps:

  • In a medium Dutch oven over medium-high heat add the olive oil. Add the ground meat and cook, breaking up into pieces, until browned. Add the onions, bell pepper and jalapeno and cook until softened. Drain excess grease.
  • Add the tomatoes, tomato sauce, cumin, chili powder, salt, cayenne, paprika and 1 cup water. Mix to combine.
  • Add the kidney beans and black beans, mix and bring to a simmer. Cover and cook for 1-2 hours.
  • Serve with desired toppings.

4 tablespoons vegetable oil
1 green bell pepper, chopped
1 yellow onion, chopped
2 ½ pounds lean ground beef
2 beef bouillon cubes
⅔ cup red wine
2 (16 ounce) cans whole peeled tomatoes, chopped, juice reserved
garlic cloves, crushed
1 (12 ounce) can tomato paste
1 ½ teaspoons paprika
2 ½ teaspoons chili powder
1 teaspoon cayenne pepper
2 ½ teaspoons dried basil
½ teaspoon dried oregano
2 tablespoons dried parsley
½ teaspoon black pepper
1 teaspoon salt
12 drops hot pepper sauce (e.g. Tabasco™)
1 (15 ounce) can kidney beans, drained
3 tablespoons flour
3 tablespoons corn meal

Steps:

  • Heat oil in a large saucepan over medium heat. Cook green pepper, and onion, until softened. Add the ground beef and cook until browned. Crumble over bouillon cubes, and stir in wine; continue to cook for a few minutes. Stir in chopped tomatoes, garlic, and tomato paste. Season with paprika, chili powder, cayenne pepper, basil, oregano, and parsley. Stir in salt and pepper.
  • Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
  • Stir in kidney beans, and hot pepper sauce. You can add the reserved tomato juice if more liquid is needed. Continue to simmer for an additional 30 minutes.
  • In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up.

This is some of the best chili in the world! I developed this chili recipe while cooking on the CASI chili circuit and won numerous awards with it! If you can not find the Sazon Goya just omit it. I do not add any "Floaters" (Beans, Onions, Peppers,...) but you may if you would like to. The recipe is cooked by using dumps...this is important not to overpower one spice over the other. I usually premix each dump during preparation and put in bowls or plastic storage bags and label accordingly. Enjoy!

  • Adjust liquid with remainder of chicken broth, if necessary.
  • Cover and cook 30 minutes
  • After 2nd spice dump and 30 minutes add:1 tbsp dark chili powder, 1 tsp ground cumin, 1/4 tsp granulated garlic, 1/4 tsp cayenne, 1/4 tsp brown sugar.
  • Reduce heat to a slow boil.
  • Cook 10 minutes.
  • Adjust salt, cayenne, and light chili powder to taste.

5 pounds beef brisket, cut in 1-inch cubes
1/4 cup olive oil
2 cups chopped yellow onions
6 large garlic cloves, minced
2 tablespoons chili powder
1 tablespoon red pepper flakes, crushed
1 tablespoon cayenne pepper, or to taste
2 tablespoons ground cumin
2 green peppers, seeded and diced
1 bay leaf
6 cups tomatoes, chopped with their liquid
Salt and freshly ground black pepper
1/2 cup strong coffee
Two 15-ounce cans kidney beans
2 tablespoons chopped basil leaves
Sour cream
Grated Cheddar
Diced tomato
Tortilla chips
Guacamole (see recipe)

Steps:

  • Pat the brisket cubes dry with paper towels. Heat the oil in a very large heavy-bottomed pot and quickly brown the meat, in batches, on all sides. Transfer the brisket to a separate bowl and set aside. Saute the onion and garlic in the same oil over medium heat until limp, but not brown, about 8 to 10 minutes. Add the chili powder, pepper flakes, cayenne pepper and cumin and saute for 1 minute. Add the green peppers, bay leaf, tomatoes with their juice, the reserved meat, 1 tablespoon of salt and 1 teaspoon pepper and bring to a boil. Reduce the heat, cover the pot with a tight fitting lid and simmer for 2 1/2 hours, stirring occasionally. Taste and season with salt, to taste. Add the coffee, cover the pot and simmer for 1 more hour.
  • Add the kidney beans and basil, and warm through. Transfer the chili to a large serving bowl and serve with sour cream, grated Cheddar, diced tomato, tortilla chips and guacamole.

This recipe was developed by Chef Rachel Bradley. I originally found it on the Castro Valley Patch website. I was looking for anuthentic chili verde recipe for my mom and stumbled across this one. Man am I glad that I did! It is AMAZING. Im not going to lie, its a lot of work but it was SO worth it! Be prepared to be cooking most of the day but please dont let that scare you off! The recipe is VERY simple, just a huge labor of LOVE! Note on PREP TIME and COOKING TIME: I have made this once and it took me 7 hours from the very beginning to putting it on the table. I also have 2 children that I was concentrating on so I set the prep time at 3 hours. 1/4 cup all-purpose flour
2 large yellow onions, fire roasted and chopped

10 poblano peppers, fire roasted, peeled, seeded, and chopped
6 jalapenos, fire roasted, peeled, seeded, and chopped
3 yellow bell peppers, fire roasted, seeded, peeled, and chopped
6 anaheim chilies, fire roasted, seeded, peeled, and chopped
2 quarts chicken stock
3 lbs tomatillos, husks removed, fire roasted
2 bunches cilantro, stems discarded, leaves chopped
3 large limes, juiced
1/2 lb smoked bacon, diced

Steps:

  • Fire-roast the peppers and tomatillos. You can do this on the grill, over a gas burner, or under your broiler turned on high. The goal is to char the skin of the vegetable. ROASTING THE PEPPERS AND TOMATILLOS ADDS TONS OF FLAVOR TO THEM! IT IS WORK BUT DO NOT SKIP THIS STEP!
  • Place the charred vegetables in a large heat proof bowl or pan and cover with foil. The steam from the vegetables will help the charred skin come off easily. Let sit covered 15-20 minutes and then the charred skin will easily peel off the peppers and tomatillos.
  • In a large (6 to 8 quart) stock pot, over high heat, brown the bacon reserving the bacon drippings.
  • Next, trim off any excess fat from the pork and cut into 1 inch squares. Liberally season the pork with salt and pepper and toss with flour to coat evenly.
  • DO NOT SKIP THIS STEP! THIS IS WHAT ADDS THE MOST FLAVOR TO THE CHILI VERDE! Brown the seasoned pork in small batches, in the bacon drippings, being careful not to overcrowd the pot. Remove the pork from the pot and pour off the fat drippings, leaving two tablespoons of fat. Caramelizing the meat to a rich golden-brown is a key flavor step!
  • In the same pot, over a medium heat, add the chopped onion, garlic, salt, and pepper and sauté until transparent, scraping up any browned bits. Add the cumin, pork, and chicken stock, and cook simmering over medium-low heat for 1 hour.
  • Place half of the peppers, one bunch of cilantro, and half of the tomatillos in to a blender or the bowl of a food processor and pulse for a chunky puree. Add the puree to the pot with the pork and stir to combine, cooking on medium-low for an additional 30 minutes.
  • Roughly chop the remaining tomatillos, peppers, and cilantro. Add them to the pot, stir, and simmer for an additional 30 minutes, for a total cooking time of two hours.
  • Add the lime juice and adjust seasoning to taste with salt and pepper.

I started this recipe a lot of years ago, and have changed and improved it (I hope) a lot of times. My mother recently made a batch with this recipe and entered it in a contest where it won (in Yuma, and I think they KNOW their chili down there!) What makes this great, I believe, is the use of almost all fresh ingredients, keeping canned items to a minimum. Using FRESH vegetables, I believe, is the real key, especially if they are certified organic! Depending on the specific jalapenos, it will be mild to medium spicy.

6 (14 1/2 ounce) cans chili beans (unrinsed, I prefer Bush's)
2 lbs ground chuck
8 garlic cloves (minced or pressed)
4 cups water
1 teaspoon sugar
2 teaspoons salt
1 teaspoon ground black pepper
2 teaspoons chili powder
1 1/2 teaspoons cumin
3 lbs roma tomatoes (Fresh, not canned!!)
2 green bell peppers
2 red bell peppers
1 bunch green onion
1 large onion (preferably a Walla Walla Sweet onion, if available)
3 jalapeno peppers

Steps:

  • Brown the beef with the garlic.
  • While the beef is browning, in an 8-quart pot add the beans, water, sugar, salt, black pepper, chili powder, and cumin, and set on stove at medium temp, stirring every few minutes to blend.
  • Dice the tomatoes, green and red peppers, green onions, sweet onion, and add to the 8-quart pot, again, stirring frequently.
  • Cut the jalapeno peppers into slices, add to about a cup of water and purée it, add to 8-quart pot, and continue to stir frequently.
  • When the beef is coooked thoroughly and browned completely, add to the 8-quart pot.
  • Bring to just short of a boil, then simmer for at LEAST 2 hours. Makes 8 Quarts.

3 tablespoons olive oil, divided

3 cups chopped onions (2 medium)

45 ounces white beans (if canned, rinsed and drained)

4 -6 cups low sodium chicken broth

Steps:

  • Preheat oven to 350. Spread chicken out in a roasting pan,.
  • Drizzle with tablespoon olive oil and season with 2 teaspoons chili powder, a tablespoon cumin, 1/2 teaspoon salt, and a pinch or two of cayenne. Roast for 30 minutes. Shred or cut into bite sized pieces. Set aside.
  • In a large pot heat remaining 2 tablespoons olive oil. Saute onion and garlic over medium heat for 5 minutes or so, until tender.
  • Add beans, shredded chicken, chilies, oregano,2 tablespoons chili powder (the author says her secret is to use a couple different kinds of chili powder), 2 tablespoons cumin, 1/2 teaspoon salt, and 1/4 teaspoon cayenne (or more).
  • Add 4 cups chicken broth, reserving the rest for thinning the chili to your desired consistency. Stir to combine and simmer gently on low for 20 minutes. To keep the chicken tender, do not let the pot boil.
  • Remove from the heat and let cool for 5 minutes or so before proceeding. With the pot still off the heat, stir 3 cups of cheese into the pot a cup at a time. Then stir in a cup of sour cream (for Dean's richer creamier version add all the cups of cheese and 2 cups of sour cream).
  • Bring the pot back to a gentle simmer over low heat to keep the dairy products from separating (don't boil). Simmer the chili for 15 to 20 minutes, adjusting with additional chicken broth, if you like. For added texture, use a potato masher in the pot to mash half the chicken and beans. Then stir to combine with the rest.
  • Serve chili in bowls with garnished on top or on the side.

1 ½ pounds ground beef
1 (1.25 ounce) package chili seasoning mix
1 teaspoon ground cumin
1 (15 ounce) can kidney beans, drained
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh parsley

Steps:

  • In a large pot over medium-low heat, combine tomatoes, tomato paste, carrot, onion, celery, wine, pepper flakes, bell peppers and steak sauce.
  • While tomato mixture is simmering, in a large skillet over medium heat, cook bacon until crisp. Remove to paper towels. Cook beef in bacon drippings until brown; drain. Stir chili seasoning into ground beef.
  • Stir seasoned beef, cumin and bacon into tomato mixture. Continue to simmer until vegetables are tender and flavors are well blended.
  • Stir in beans, cilantro and parsley. Heat through and serve.

1 (2 to 3 pound) whole chicken
6 cups water, or as needed to cover
3 (15.5 ounce) cans white beans, drained
2 (15.5 ounce) cans hominy, drained
1 large onion, chopped
2 (4 ounce) cans chopped green chiles
3 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon dried oregano, or more to taste
2 cubes chicken bouillon, or more to taste
1 (8 ounce) package shredded Monterey Jack cheese

Steps:

  • Cover chicken with water in a large pot and bring to a boil; reduce heat to low and simmer until chicken is no longer pink in the center, 45 minutes to 1 hour. Remove chicken and set aside to cool. Reserve cooking liquid. Shred chicken when cool enough to handle.
  • Combine chicken, cooking liquid, white beans, hominy, onion, green chiles, garlic, cumin, oregano, and chicken bouillon in a slow cooker. Cover and refrigerate overnight.
  • Cook chicken and bean mixture on Low in slow cooker for 4 to 4 1/2 hours. Top individual servings with Monterey Jack cheese.

If you like a thick white chili with a bit of "afterburn", then try this. I started out with a few other recipes, and have tweaked this to our family's taste. I submitted this recipe for a chili cookoff at work and came in 3rd place! (the other 2 winners were traditional red chili with beef).

2 (6 ounce) packages Tyson Fajita Chicken Strips, diced
1 medium onion, diced
1 tablespoon olive oil
1 (1 1/4 ounce) package Mccormick white chicken chili seasoning mix
3 teaspoons chicken bouillon powder (I use Caldo de Pollo-mexican chicken bouillon)
1 1/2 teaspoons garlic powder
1 teaspoon oregano
1/2 teaspoon ground black pepper
1/4 teaspoon ground cayenne pepper (or to desired likeness)
1/4 teaspoon cumin
2 (15 1/2 ounce) cans northern white beans, rinsed and drained
2 cups water
1/2 cup light cream (I use 1/2 and 1/2)
1 cup sour cream
1 (10 ounce) can rotel Mexican-style tomatoes (or regular kind if you can find mexican style)
1 (4 ounce) can diced green chilies
8 ounces white cheese dip (I use Gordo's brand (in the refrigerator section by the other cheese at Publix. It comes in a 16 oz )
lime juice (optional, but a fresh squeezed lime is really good!)

Steps:

  • In a stock pot, add diced onion and olive oil. Saute until clear.
  • Add seasoning packet and all other "dry" ingredients.
  • Continue to saute dry ingredients for a few minutes, stirring often.
  • Whisk in the water and lime juice (if using)and heat to boiling.
  • Add Chicken, beans, rotel, diced chili's, cheese dip, 1/2 and 1/2 and the sour cream.
  • Stir thoroughly and reduce heat to a simmer.
  • Let simmer for ~30 minutes and enjoy
  • It's even better the next day.

1 lb hamburger meat
2 tablespoons flour
1 (12 ounce) can diced tomatoes
2 (4 ounce) cans green chilies (chopped)
1 teaspoon garlic salt
1/2 teaspoon cajun seasoning
1 onion, chopped
7 potatoes (cut into medium sized chunks)
1 cup water

Steps:

  • Brown meat.
  • Drain off grease.
  • Stir in flour.
  • Cook together 5 minutes.
  • Add tomatoes, chili, onion.
  • Stew 5 minutes.
  • Add water a few tablespoons at a time, for desired thickness.
  • Bring to a boil.
  • Add potatoes.
  • Slow cook till potatoes are done.
  • Salt and pepper to taste.
  • May be frozen.
  • May also be cooked in crock pot (this is generally how I cook it)cook meat first, then add all remaining ingredients.
  • Slow cook for 5 to 6 hours.

Years ago when my son was in boy scouts I won the chili cook off with this recipe. The boys served as judges so I guess my secret ingredient of brown sugar gave them the sweet heat that they liked.

1 large onion diced
salt and pepper to taste
2 can(s) 14.5 oz. chili beans
1 large can 28 oz. crushed tomtoes
1 large can 15 oz tomato sauce
1 c beef broth
1/2 c molasses
1/2 c packed brown sugar
3 Tbsp chili powder
2 Tbsp each cumin and red pepper flakes
1 Tbsp smoked paprika
shredded cheddar cheese for serving (optional)

Steps:

  • 1. Brown the ground beef with the onions and season with salt and pepper. Drain. Add remaining ingredients and bring to a boil.
  • 2. Reduce heat and simmer 1 hour adding some water if it gets too thick.
  • 3. Sprinkle cheese on top to serve.

1 bag each frozen white corn,and yellow corn
1 8oz pkg of pepper jack ,monterey,mozzarella,and mild cheddar cheese
1/2 of each/green bell pepper,red,and yellow pepper.diced
1 large red onion. diced
4 cloves garlic minced
2 tsp cummin
2 can(s) rotel tomatos and green chilis
2 c packed brown suger
1 12oz can(s) peas

  • 1. Debone chicken and cut in small pieces. ( I use a 17 qt roster whin i make my chili for cook offs)pour broth,beans,green chilies,and rotel into a 7gt or larger crock pot.cook on high for 1/2 hour stiring often.add chicken and sausage. stir to mix well. add corn,peppers alfredo sauce. stirr to miz well.add cummin,1/2 teaspoon blkck pepper. stir. layer on cheese. cook for abought 1 hour on high.
  • 2. After 1 hour. add brown suger. stir and mix well. cook on low for 4 hours.
  • 3. After 4 hours taste and re season as needed. i serve with lomain noodles

1 Tbsp bacon grease or vegetable oil
1 lb lean sirloin, diced in 1/2 inch cubes
1 lb ground sirloin or round
1 lb jimmy dean's breakfast pork sausage chub (hot or mild), or ground pork
1 lb chili stick or brick
2 large onions, chopped
1 large bell pepper, seeded and chopped
3-4 large diced jalapeno, seeded or not (optional)
2 celery stalks, chopped
28 oz petite diced tomatoes with juice
15 oz regular size diced tomatoeswith juice
1 bottle chili sauce
8 oz can tomato sauce
6 oz can tomato paste
8 oz can beef broth (or water)
2 beef bouillon cubes if using water
1 can(s) beer (regular or light)
3 Tbsp minced garlic
3 Tbsp mexene chili powder (or more to taste)
1/2 c dried chives
2 tsp lea & perrin worchestershire sauce
2 Tbsp granulated garlic or powder
2 tsp granulated onion or powder
1 Tbsp cayenne pepper (or more to taste)
2 tsp cajun seasoning (zatarain's or tony cacharie's)
3 can(s) (15 oz) dark red kidney beans, rinsed and drained
crushed red pepper flakes if you want more heat (optional)
salt and pepper to taste

Steps:

  • 1. In an extra-large dutch oven (8 qt), on medium high heat, browning cubed meat, ground beef, and pork sausage or ground pork in bacon grease or oil. When cooked transfer meat to a paper towel lined bowl and set aside.
  • 2. Add chopped vegetables, except garlic, and cook down until meats are cooked through and vegetables are tender crisp. If added grease is needed add olive oil or margarine. *Sometimes I add pickled, diced and seeded jalapeno peppers for flavor rather than for heat factor. Raw jalapenos with seeds will increase the heat level.
  • 3. Meanwhile, in a small saucepan heat the chili stick by itself until completely cooked down**.
  • 4. Lower heat under Dutch oven and add chili, tomatoes, tomato paste & sauce, and chili sauce to pot and mix well, scraping bits from bottom of pot. Continue stirring frequently for about 15 minutes. Stir in beef broth, beer, minced garlic, chili powder, chives, Lea & Perrin, and remaining dry seasonings. Return drained meat and vegetables to the pot and stir.
  • 5. Cover and simmer on low for about 1 hour, stirring frequently to avoid sticking. If it seems to need more liquid add water or tomato juice (I use V-8). Add beans and cook another 30 minutes, stirring frequently. Taste again for seasonings and adjust as needed. If you're going to use the crushed red pepper flakes add them with the beans.
  • 6. Serve in individual bowls with corn bread muffins and choice of garnishes for topping. Enjoy! This makes a medium-heat chili. Add cayenne and chili flakes and/or *jalapeno peppers to increase the heat to your taste. **Sometimes, not often, there will be larger pieces of unground pork fat in the chili stick so I melt it down separately just in case. Throw those pieces away. Garnishes: sour cream, finely chopped onion, thinly sliced green onions, sliced or diced fresh or pickled jalapeno peppers, grated sharp cheddar cheese, hot sauce, cayenne pepper, crushed red pepper flakes, tortilla chips, etc. Competition Tips: Always make this medium hot so that everyone can enjoy it but have plenty of cayenne, hot pepper sauce, crushed red pepper flakes, and chili powder on hand for those who want to spice up their bowl. It's Always better a day or two after cooking, and it freezes well. Always make way more than you need for the competition because when the other competitors run out you'll have some remaining for those who still want more. If they keep coming back to your chili, you'll most likely get their vote.

5 lb ground sirloin
2 large onion diced
6 clove garlic minced
4 jalapeno's seeded and minced
salt and pepper
2 Tbsp each smoked paprika, mccormicks grill mates chipotle roasted garlic powder, rio grande chili blend, ancho chili powder, new mexico red chili powder and red pepper flakes
28 oz can tomato puree
28 oz can crushed tomatoes
28 oz can whole peeled tomatoes rough chop with juice
14 oz can tomato sauce
6 oz can tomato paste
1/2 c brown sugar
sour cream and shredded cheese for topping

Steps:

  • 1. Brown the ground sirloin with the onion, garlic, and jalapenos. season with salt and pepper. Drain. Add to slow cooker.
  • 2. Add all other ingredients except sour cream and cheese. Cook on low 6 to 8 hours.
  • 3. Serve with shredded cheese and a dollup of sour cream

Tips:
