Categories     Sandwich

Yield 4

Number Of Ingredients 8

4 English muffins, split
1 ripe avocado, peeled, pitted and sliced
1 to 2 large vine-ripened tomatoes, sliced thin
Coarse salt
1/4 cup chopped fresh basil
Fresh Mozzarella Cheese, sliced thin
1/4 cup grated Parmesan cheese
Fresh ground black pepper

Steps:

  • Preheat oven broiler to high. Under the broiler, toast English muffin halves on a baking sheet until golden brown. Remove from oven. Top each muffin half with sliced avocados and sliced tomatoes; lightly salt the tomatoes. Sprinkle chopped basil over the tomatoes. Put a layer of mozzarella cheese over the basil, sprinkle with grated Parmesan cheese, and top with black pepper. Broil prepared muffin halves for approximately 2 to 3 minutes or until cheese has melted. Remove from oven and enjoy!

Tips:

  • Choose ripe avocados: The best avocados for this sandwich are ripe but still firm. They should yield to gentle pressure when squeezed but not be mushy.
  • Use fresh bread: A sturdy bread that can hold up to the fillings is best. Sourdough, whole wheat, or a hearty white bread are all good options.
  • Add a layer of flavor: Spread a thin layer of pesto, mayonnaise, or hummus on one side of the bread before adding the avocado and tomato. This will add extra flavor and richness to the sandwich.
  • Season the avocado: Before mashing the avocado, season it with salt, pepper, and a squeeze of lemon juice. This will help to brighten the flavor and prevent the avocado from browning.
  • Don't overcook the sandwich: The avocado and tomato should still be slightly firm after grilling. If you overcook the sandwich, the fillings will become mushy and the bread will be too crispy.

Conclusion:

The avocado tomato melt is a delicious and easy-to-make sandwich that is perfect for a quick lunch or dinner. With its creamy avocado, juicy tomatoes, and melted cheese, this sandwich is sure to satisfy your cravings. Try experimenting with different types of bread, fillings, and seasonings to create your own unique version of this classic sandwich.
