1 pound ground chicken
1 bunch green onions, chopped, or to taste
2 egg whites
1 bunch fresh cilantro, chopped, or to taste
1 jalapeno pepper, seeded and chopped
1 ½ tablespoons sour cream
1 tablespoon ground dried chipotle pepper
salt and ground black pepper to taste
2 cups dry bread crumbs
2 teaspoons garlic powder, or to taste
1 tablespoon vegetable oil
1 ripe avocado
½ cup sour cream, or to taste

Steps:

  • Combine ground chicken, green onions, egg whites, cilantro, jalapenos, 1 1/2 tablespoons sour cream, chipotle pepper, salt, and pepper in large bowl. Mix until sticky and difficult to handle.
  • Shape ground chicken mixture into patties. Combine bread crumbs, garlic powder, salt, and pepper in a bowl. Coat patties lightly with seasoned bread crumbs.
  • Heat oil in a large skillet over medium heat. Cook patties until browned, about 2 minutes per side. Reduce heat to medium-low. Cover and cook until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Mash avocado and 1/2 cup sour cream together in a bowl. Season with salt and pepper. Spread over chicken patties.

1 loaf ciabatta or 1 loaf other Italian bread
1/4 cup extra virgin olive oil
1 avocado, cut into thin slices, sprinkled with salt and pepper
1 medium tomatoes, cut into thin slices
10 -12 slices mozzarella cheese (thin slices)
1/2 cup crumbled feta cheese
1/2 cup mayonnaise
1 garlic clove, minced
1 teaspoon fresh lemon juice
salt and pepper
1 teaspoon extra virgin olive oil

Steps:

  • For the garlic spread, place mayonnaise, garlic, lemon juice, salt and pepper in a small bowl. Whisk to thoroughly combine. Slowly add the the olive oil, whisking until incorporated.
  • For the sandwich, remove a small amount of the inside of ciabatta loaf, creating a hollow in the center of the loaf to make room for the filling. Slice the ciabatta loaf, on an angle, into 3-4 sandwich-sized pieces. Slice each piece in half, lengthwise. Brush a small amount of olive oil onto the outside of each piece of bread, so that both the top and bottom halves of each sandwich have oil on the outside of the bread. Slather some garlic spread onto the inside of the bottom half of each sandwich, reserving any leftover spread for a later use. Onto the bottom half of each sandwich, place 2-3 slices of mozzarella cheese, 2-3 slices of tomato, 3-4 slices of avocado, and about 2 tablespoons of feta cheese. Firmly place the top piece of bread onto each sandwich.
  • Brush a grill pan or griddle with a small amount of olive oil, and place over medium-high heat. Place the sandwiches onto the hot pan. Place a heavy pan on top of the sandwiches to weigh them down, careful not to squeeze the filling out of the sandwiches. After 3-4 minutes, use a spatula or tongs to carefully flip the sandwiches, and another 3-4 minutes, until cheese is completely melted.
  • Cool for a few minutes and serve.

Sweet potatoes are such a fall food for my family and I love putting a healthy spin on a plain old burger with this unique recipe!

2 sweet potatoes
2 garlic heads
1 cup canned cannellini or 1 cup canned black beans
1/2 cup panko breadcrumbs
1 large egg, lightly beaten
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cinnamon
1/8 teaspoon ground cumin
1/4 teaspoon garlic powder
2 -3 tablespoons olive oil
1 avocado, sliced
1/2 cup sweet corn
1 teaspoon chopped fresh cilantro
1 tablespoon lemon juice
2/3 cup reduced-fat sour cream
1 tablespoon honey
1 tablespoon heavy cream
salt and pepper
4 whole grain buns

Steps:

  • Preheat oven to 375 degrees.
  • Rinse sweet potatoes in cold water, wrap in Reynolds Wrap Foil and poke several times with a fork.
  • Bake for 1 hour (or more) depending on the size of the potatoes.
  • Take 2 bulbs of garlic, chop off about 1/4 inch of the tops, drizzle with olive oil and wrap in Reynolds Wrap Foil.
  • Garlic can cook 30-35 minutes with Sweet Potatoes.
  • Remove garlic and sweet potatoes from oven and allow to cool.
  • Once cool, mash cannellini beans in a large bowl with sweet potatoes.
  • Add in spices, egg, and panko.
  • Mix all of these ingredients together and refrigerate for 20 minutes to help stiffen for burgers.
  • Meanwhile mix the sour cream with the 2 roasted bulbs of garlic, squeezed for all the good stuff, honey, salt, and pepper.
  • Blend until smooth.
  • Take avocado and chop into bite size chunks and in a small ball combine with sweet corn, lemon juice and cilantro for topping.
  • Heat a large pan over medium with olive oil.
  • Take sweet potato mixture and shape into 4 patties.
  • Cook on each side approximately 6-7 minutes until patties seem to hold together and flip.
  • Add the patties to your whole wheat buns and top with avocado mixture and garlic cream sauce.
  • Add lettuce, tomato and onions if desired.

1 celery stalk
2 sprigs fresh flat-leaf parsley

1 wild salmon fillet (about 1 pound and 1 inch thick), skin on
1 ripe avocado, halved, pitted, and peeled
1 tablespoon wasabi powder, mixed with 1 tablespoon lukewarm water
1 whole-wheat baguette (about 21 inches long)
Radish or sunflower sprouts

Steps:

  • Fill a saucepan wide enough to hold salmon with 2 1/2 inches cold water. Stir in 1/4 cup lemon juice, the celery, parsley, and 2 teaspoons salt. Bring to a boil; reduce heat. Add salmon, skin side down. Cover, and simmer until salmon is just cooked through, 10 to 12 minutes. Transfer salmon to a plate, and let cool 20 minutes. Discard poaching liquid. Flake salmon into large pieces.
  • Put avocado, wasabi paste, and remaining 3/4 teaspoon lemon juice into a food processor, and season with salt; puree. Transfer to a small bowl, and cover tightly with plastic wrap, pressing wrap directly onto the surface. Refrigerate until ready to use (up to 30 minutes).

Arrange, flat side down, in a single layer on a baking sheet. Toast in oven until lightly golden, about 7 minutes. Let cool 10 minutes. 1/2 teaspoon fennel seeds
1 ripe Hass avocado
3 tablespoons fresh lemon juice (from 2 lemons)
2 scallions, thinly sliced on the bias
Coarse salt and freshly ground pepper
4 slices rustic Italian bread, grilled or toasted
2 cups watercress
2 teaspoons extra-virgin olive oil
Garnish: finely grated lemon zest

Steps:

  • Prepare an ice-water bath. Bring a large pot of water to a boil. Reduce heat to medium-low. Plunge lobsters into water headfirst, and simmer, covered, for 11 minutes. (Do not let water boil.) Transfer to ice-water bath using tongs. Let stand for 10 minutes to cool.
  • Crack lobster claws, knuckles, and tails, and remove meat. Chop meat into chunks.
  • Toast fennel seeds in a skillet over medium-high heat for 1 minute; grind. Transfer to a food processor; pulse with avocado, 2 tablespoons lemon juice, 2 teaspoons scallions, 1/2 teaspoon salt, and some pepper until smooth.
  • Spread avocado mixture onto bread; top with watercress. Arrange lobster meat on top, and sprinkle with remaining scallions. Drizzle with remaining tablespoon lemon juice and the oil. Garnish with lemon zest.

6-8 slice bacon ( i use thick bacon)

1/4 c mayonnaise
1-2 tomatoes chopped or sliced optional
1/4 c cilantro fresh and chopped ~ optional
1 Tbsp llemon juice (if not using it all to keep it green)
bread, a nice whole grain bread, grilled or toasted french bread, or i make no knead bread in my dutch oven slice it put it on a tray in the oven with a bit of olive oil drizzled on and rubbed with just a bit of garlic.

Steps:

  • 1. fry bacon until crisp drain on paper towel and crumble.
  • 2. Pit your avocados remove from skin, chop and/or mash in a bowl.
  • 3. season with salt and pepper.
  • 4. Optional: add chopped tomatoes if desired.
  • 5. Serve on a nice whole grain bread, or slices of french bread you toasted in the oven with a bit of olive oil and rubbed with just a bit of garlic, or serve as a dip, or on a salad. I make no knead bread in my dutch oven, slice it and toast. Wraps are good also.
  • 6. Sprinkle with some chopped cilantro if desired... and enjoy!!!!

A friend brought this to a pot lock at work. I almost finished the whole thing! It is great with crackers or as a spread on bread. You can enjoy it alone or together with fresh vegetables such as any greens, tomatoes or even fish, chicken or ham. I love the fresh taste of it! It keeps a few days in the fridge. I also would like to try it with cottage cheese instead of the feta.

2 avocados, peeled and chopped (about 2 cups)
1 cup feta cheese
1 lemon, juice and peel
2 garlic cloves, chopped
1/2 teaspoon salt
1/2 teaspoon pepper

  • Put all the ingredients into your food processor and mash.
  • You might want to add more spices, depending on your personal taste.

1/4 teaspoon onion powder
1 1/2 tablespoons chopped cilantro
