SHRIMP CEVICHE WITH AVOCADO

Shrimp Ceviche With Avocado image

My son-in-law makes this wonderful ceviche for us every Christmas and New Years, and for the 4th of July too! Everyone loves it! Serve the ceviche well-chilled in small plastic cups or chilled cocktail glasses (I suggest placing the bowl of ceviche within a larger bowl full of ice to keep it icy cold), along with tostadas chips or tortilla scoops and some chili sauce on the side. Very delicious and refreshing! Note: amounts are approximate-- feel free to adjust measurements to suit your own tastes. Cook time is chill time.

FRESH SHRIMP CEVICHE WITH AVOCADO

Fresh Shrimp Ceviche with Avocado image

This is a recipe I created by combining all the ingredients I liked in other Ceviche recipes. Turn out to be a hit! Everyone loves it. I make this ahead of time and take it out on our boat. Served in plastic cups. Remember to keep chilled. This can be served as elegant or casual as you like. I've served it in anything from plastic cups to Martini glasses or even in brandy glasses for a more special presentation. Cook time does not include marinating the shrimp.

Time 32m

Yield 15-20 serving(s)

Number Of Ingredients 12

2 lbs medium shrimp, peeled and deveined (i use frozen and thawed)
8 limes, juice of
8 lemons, juice of
2 oranges, juice of, preferably sour oranges
2 (14 1/2 ounce) cans petite cut canned tomatoes (leave in juice)
1 red onion, cut into 1/2-inch dice
1/2 bunch fresh cilantro, stemmed and roughly chopped
1 serrano chili, roughly chopped
2 large avocados, peeled, seeded, and cut into 1/2-inch dice
2 large cucumbers, peeled, seeded and cut into 1/2-inch dice
1 medium yellow bell pepper, cut into 1/2 inch dice (yellow)
1 medium red bell pepper, cut into 1/2 inch dice (red)

Steps:

  • Clean and devein the shrimp, cut into 1-inch pieces, and transfer to a bowl. Add the lime, lemon, and orange juice, stir to combine, and refrigerate for at least 6 hours and up to 8. (I let my sit overnight). This technique cooks the shrimp.
  • Chop all the vegetables into small cubes.
  • Add canned tomatoes with the juice, onion, cilantro, bell peppers and serrano pepper into the shrimp mixture (with the citrus) and let sit at room temperature for about 20 minutes.
  • When ready to serve, gently stir in diced cucumber. Divide the ceviche among 8 chilled martini glasses, top with avocado and tuck 2 to 3 tortilla chips around the sides of each. This recipe actually makes alot! I've served close to 15 people and they all had seconds.
  • You can leave the avocado out and serve it individually for those who don't want avocado -- either way, it's delicious.

SHRIMP AND SCALLOP CEVICHE WITH AVOCADO CREMA

SHRIMP AND SCALLOP CEVICHE WITH AVOCADO CREMA image

Categories     Fish     Marinate     Low Fat

Yield Serves 4

Number Of Ingredients 16

3/4 lb. Uncooked Deveined Shrimp, tails pulled, cut in half the short way
3/4 lb. Uncooked Scallops, cut into quarters
1/2 c. Fresh Squeezed Lime Juice
1/4 tsp. Sea Salt
Fresh Ground Pepper
3/4 lb. Tomatoes, seeded* and diced (varicolored heirlooms work beautifully)
1/4 lb. Sweet Onion (Vidalia, Walla Walla ), diced small
1 Jalapeño Peppers, seeded and minced OR
2 small Serrano Peppers, minced (these will be spicier than the jalapeño)
1 Garlic Clove, minced
1/4 c. Parsley, chopped
1/4 c. Cilantro, chopped
Avocado Crema
1 large or 2 small avocadoes
1/4 c. Lemon or Lime Juice
1/4 tsp. Sea Salt

Steps:

  • Place first five ingredients in a glass or ceramic bowl (metal will react with the acidity of the lime). Refrigerate at least 16 hours, turning shrimp and scallops once or twice during that time to evenly distribute marinade. Before serving, prepare the remaining ingredients in a separate bowl. Mix thoroughly with marinated seafood and serve with a squeeze of avocado crema (see recipe below). *To seed a tomato, cut it in half crosswise, then gently squeeze each half, twisting your hand in a clockwise/ counterclockwise motion. Remove avocadoes from their skins, discarding pits. Place avocadoes into a blender. Add the lemon/lime juice and sea salt. Whir mixture until puréed, stopping the blender if necessary to rearrange contents for a complete purée. Place ceviche in individual chilled wine goblets or glass bowls. Squeeze a dollop of crema over each serving using a pastry bag, or fill a plastic bag with avocado crema, snip a corner tip of the bag, and use as you would a pastry bag.

AVOCADO SHRIMP CEVICHE-ESTILLO SARITA

Avocado Shrimp Ceviche-Estillo Sarita image

A tried and true ceviche recipe to be enjoyed for a Sunday brunch in our cafe. It is believed by most Latinos that the best time to eat ceviche is on a sunny day. Rainy days cause stomach cramps and nightmares. Of course most Latinos (especially my wife) can make a good ceviche blindfolded on any day rain or shine, in my opinion. Excellent for an appetizer in smaller portions or as a meal itself. Personally I enjoy this with an ice cold beer on the side.

Tips:

  • Choose the right avocado: Use ripe but firm avocados. Ripe avocados will yield to gentle pressure, but they should not be mushy. Avoid avocados that are too hard or have dark spots or bruises.
  • Use fresh shrimp: Fresh shrimp is essential for the best ceviche. Avoid frozen shrimp, as it can be tough and flavorless. If you must use frozen shrimp, thaw it completely before using.
  • Citrus is key: Ceviche is all about the citrus marinade. Use a combination of lime juice, lemon juice, and orange juice for the best flavor. Be sure to use fresh citrus juice, as bottled juice can have a bitter taste.
  • Don't overcook the shrimp: Shrimp cooks very quickly, so it's important not to overcook it. The shrimp should be opaque and just cooked through. If you overcook the shrimp, it will become tough and rubbery.
  • Serve immediately: Ceviche is best served immediately after it is made. The longer it sits, the more the shrimp will cook and the more the flavors will meld together. If you need to make ceviche ahead of time, you can refrigerate it for up to 2 hours. However, it is best to serve it as soon as possible.

Conclusion:

Avocado shrimp ceviche is a delicious and refreshing dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its vibrant flavors and healthy ingredients, avocado shrimp ceviche is a surefire hit. So next time you're looking for a light and flavorful meal, give this recipe a try. You won't be disappointed!
