4 cornichons, sliced

1 tablespoon Tabasco
1 1/4 cup breadcrumbs, divided (preferably Panko)
2 Tbs cup lemon juice
1 1/2 tablespoon Worcestershire
1 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 beaten egg
2 mangos
2 cups water
1 teaspoon confectioner sugar

Steps:

  • In a 10 inch saute pan, heat 1 cup canola oil on high heat. Test readiness with a piece of bread. Turn heat to medium. Check temperature with thermometer - it should read 375 degrees F. In a medium mixing bowl, combine crab, onion, scallions, bell pepper, mayonnaise, Tabasco, 1/4 cup of the breadcrumbs, lemon juice and Worcestershire sauce. Mix until fully incorporated. Make 3 ounce cakes and dredge in the flour, then egg and the remaining breadcrumbs. Lay the cakes in the oil and pan-fry for 5 to 6 minutes. Remove and place on a paper towel and season with salt in a mixing bowl.
  • In a medium mixing bowl, combine all ingredients. Mix well and refrigerate until ready to use.
  • In a blender combine ingredients and mix until smooth. Refrigerate until ready to use.
  • To serve crab cakes, spoon puree onto the plate in a small pool. Slice the cake in half and lay the bottom portion in the puree. Spoon avocado salsa on top and place the top of the cake on the avocado like a sandwich. Top with a small amount of avocado and garnish with cilantro leaf.

  • Add the cucumber and pulse until cucumber is finely chopped.
  • Add the mint and dill and pulse again so combine. You just want them well incorporated into the mid, not pureed.
  • Let the mixture sit for 10 minutes or so to let the flavors marry, and then taste for salt and seasonings.
  • Arrange the sliced of bread on the counter. Spread the avocado mixture onto all 12 slices.
  • Add a single layer of cucumber on 6 of the slices.
  • Close each sandwich.
  • Use a steak knife to cut off the crusts.

2 tablespoons Land O Lakes® Butter with Olive Oil & Sea Salt butter, cut into small pieces
2 cloves garlic, finely chopped
1/2 teaspoon chopped fresh thyme leaves
Freshly ground pepper to taste
1 ripe avocado, pitted, peeled and quartered
4 slices sourdough bread, toasted

Steps:

  • Heat oven to 450°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In baking dish, gently mix mushrooms, butter, garlic, thyme and pepper.
  • Roast uncovered 30 minutes, stirring gently halfway through baking.
  • Spread 1 quarter of avocado over each slice of toasted bread. Top with roasted mushroom mixture. Serve immediately.

I combined a number of my favorite things to come up with this tasty sandwich. This is a great use for leftover chicken. Makes a great summer supper, or hearty lunch.

1 1/2 cups cooked chicken, diced
1/2 avocado, diced
2 tablespoons onions, minced
2 tablespoons pimentos, minced
1 tablespoon fresh parsley, minced
2 tablespoons celery, minced (optional)
3 tablespoons mayonnaise (more if desired)
1/2 teaspoon lemon juice (bottled is fine here, but fresh is even nicer)
2 -5 drops hot pepper sauce
salt
pepper
2 sandwich rolls, such as french rolls, sub rolls, ciabatta
2 leaves lettuce

Steps:

  • Combine all ingredients except rolls and lettuce in a medium bowl.
  • Slice rolls in half, and toast if desired. Lay lettuce leaves on bottom halves of rolls, and divide chicken salad between them. Place roll tops on sandwich.
