Time 15m

Number Of Ingredients 7

3 navel oranges
2 tablespoons white-wine vinegar
2 tablespoons olive oil
Coarse salt and freshly ground pepper
1 large head of red leaf lettuce, torn
1 avocado, peeled, pitted, and thinly sliced
4 radishes, cut into wedges

Steps:

  • Cut off ends of oranges; using a paring knife, remove peel, pith, and outer membranes, following the curve of the fruit. Working over a bowl to catch the juices, cut between sections to remove whole segments; add segments to a large bowl. Squeeze juice from membranes into a bowl; measure out 3 tablespoons juice; reserve remaining juice for another use.
  • In a small bowl, whisk together reserved orange juice, vinegar, and olive oil; season with salt and pepper.
  • In a large bowl, combine oranges, lettuce, avocado, and radishes. Drizzle with dressing as desired, and toss gently to combine. Serve immediately.

Tips:

  • Select ripe avocados: Choose avocados that are firm but slightly yielding to the touch. Avoid avocados that are too hard or have bruises or blemishes.
  • Prepare oranges properly: For the orange-wasabi glaze, use fresh oranges and zest them finely. Avoid using bottled orange juice, as it may contain additives and preservatives that can alter the taste of the glaze.
  • Make the most of wasabi: Wasabi can be quite spicy, so use it sparingly to taste. Gradually adjust the amount of wasabi in the glaze until you achieve the desired level of spiciness.
  • Marinate the chicken: Marinating the chicken in the orange-wasabi glaze not only infuses it with flavor but also tenderizes it. Allow the chicken to marinate for at least 30 minutes, or up to overnight.
  • Cook chicken thoroughly: Ensure that the chicken is cooked thoroughly before serving. The internal temperature should reach 165°F (74°C) as measured with a meat thermometer.
  • Assemble the salad thoughtfully: Layer the avocado slices, orange segments, and glazed chicken on top of the mixed greens. Arrange them neatly to create a visually appealing presentation.
  • Use high-quality balsamic glaze: Opt for a good-quality balsamic glaze to drizzle over the salad. Cheap or low-quality balsamic glazes may not have the right consistency or flavor.

Conclusion:

This avocado salad with orange-wasabi glazed chicken is a delightful fusion of flavors and textures. The creamy avocado, juicy oranges, and tender chicken are perfectly complemented by the tangy and slightly spicy orange-wasabi glaze. The mixed greens add a refreshing touch, while the balsamic glaze provides a touch of sweetness and acidity. By following these tips and the recipe carefully, you can create a delicious and visually appealing dish that is sure to impress your family and friends.
