CLASSIC PASTA SALAD WITH MOZZARELLA, AVOCADO AND BASIL

Classic Pasta Salad With Mozzarella, Avocado and Basil image

With its colorful jumble of tomatoes, avocado, olives, mozzarella and cucumber, this has everything you've ever wanted in a pasta salad. But feel free to customize the ingredients to suit your own tastes (see Tip), and to add lemon and salt to the dressing to taste. As long as you don't overcook the pasta, and add it while still hot to the dressing, you really can't go wrong. Make this a few hours ahead so the flavors have a chance to meld, but be sure not to add the avocado until just before serving.

Time 25m

Yield 8 to 10 servings

Number Of Ingredients 15

3 tablespoons minced shallot or red onion
2 tablespoons fresh lemon juice, plus more to taste
1 tablespoon balsamic vinegar
1/2 teaspoon fine sea salt, plus more to taste
1/4 teaspoon black pepper
1/3 cup extra-virgin olive oil, plus more for drizzling
Fine sea salt, as needed
1 pound short pasta, such as campanelle, fusilli or farfalle
1 ripe avocado, peeled, pitted and diced
1 tablespoon fresh lemon juice
1 pint cherry tomatoes, halved
1/2 cup sliced cucumber
1 pound fresh mozzarella, cut into bite-size cubes
1/4 cup shaved Parmesan
1/4 cup thinly sliced fresh basil

Steps:

  • To prepare the dressing, in a large bowl, whisk together shallot, lemon juice, balsamic vinegar, salt and pepper. Let sit for 5 minutes, then whisk in oil. Taste and add more salt and-or lemon juice if needed.
  • Bring a large pot of heavily salted water to a boil. Add pasta and cook until it is just al dente, usually a minute less than the package instructions. Drain well. While still warm, add the pasta to the bowl with the dressing and toss well. Let pasta cool, soaking up the dressing.
  • In a medium bowl, gently toss together avocado, lemon juice and a pinch of salt.
  • Just before serving, add tomato, cucumber, mozzarella and Parmesan to the bowl with the pasta and toss well. Gently fold in avocado and basil.
  • Drizzle with olive oil, cracked black pepper and salt to taste before serving.

CUCUMBER-AVOCADO SALAD

Cucumber-Avocado Salad image

Crunchy cucumbers and creamy avocados are the stars of this simple five-ingredient salad. Peeling the cucumbers in alternating stripes helps them soak up seasonings while maintaining their shape. After being cut into bite-size pieces, they are combined with salt to draw out moisture, concentrating their flavor. Cubed avocado is tossed with lemon juice or vinegar to prevent browning, then everything is stirred together vigorously so that the avocado breaks down a bit to add a glossy coating. Finish with a hit of red-pepper flakes for heat, or embellish with herbs, lettuces, beans, soft-boiled eggs, feta, nuts and so on.

Time 15m

Yield 4 servings

Number Of Ingredients 7

2 scallions, trimmed then sliced crosswise 1/4-inch-thick
Ice
1 pound cucumbers (such as 6 Persian or mini seedless, or 1 English)
Kosher salt
2 very ripe avocados
2 tablespoons fresh lemon or lime juice, or unseasoned rice vinegar, plus more as needed
Red-pepper flakes or hot sauce, for serving

Steps:

  • Transfer the scallions to a small bowl of ice water to crisp.
  • Peel the cucumbers in alternating stripes, trim ends and cut cucumbers lengthwise. Scoop out the seeds, if desired. Cut cucumbers into bite-size pieces (thin slices, 1/2-inch cubes, or smashed into irregular shapes), then transfer to a colander set in the sink. Toss with 1 teaspoon salt and set aside to drain, at least 5 minutes or up to 15.
  • When you're ready to eat, halve the avocados and remove the pits. Using a spoon, remove the flesh from the skins, then cut the flesh into 1/2-inch cubes. Transfer to a large bowl, add the lemon juice and season with salt. Stir to combine.
  • Shake the cucumbers in the colander to get rid of any excess moisture, then transfer to the bowl with the avocado. Drain and shake the scallions in the colander. Add the scallions to the bowl.
  • Stir the salad ingredients vigorously just until the avocado breaks down a bit. The cucumbers should be glossed with avocado but the majority of the avocado pieces should still remain cubed. Season to taste with salt, lemon and red-pepper flakes or hot sauce.

Tips:

  • Choose ripe avocados: Look for avocados that are dark green or black in color, with no blemishes or bruises. They should feel slightly soft when you squeeze them gently.
  • Use a sharp knife to cut the avocado: This will help to prevent the avocado from becoming bruised or mashed.
  • Remove the avocado pit: Use a spoon or knife to carefully remove the pit from the avocado. Be careful not to cut yourself.
  • Slice or cube the avocado: Cut the avocado into slices or cubes, depending on your preference.
  • Use fresh cucumbers: Choose cucumbers that are firm and green, with no blemishes or bruises.
  • Slice the cucumbers: Use a sharp knife to slice the cucumbers thinly. This will help them to absorb the dressing better.
  • Make the dressing ahead of time: The dressing for this salad can be made ahead of time and stored in the refrigerator for up to 3 days. This will save you time when you're ready to assemble the salad.
  • Use your favorite pasta: This salad can be made with any type of pasta that you like. Short pastas, such as penne or rotini, work well, as do longer pastas, such as spaghetti or fettuccine.
  • Add other vegetables: Feel free to add other vegetables to this salad, such as tomatoes, red onion, or bell peppers.
  • Serve immediately: This salad is best served immediately after it is made. The avocado will start to brown if it sits for too long.

Conclusion:
