BASIL AVOCADO DIP

Basil Avocado Dip image

This unexpected dip is a terrific way to use ripe avocados when guacamole isn't an option. It's mild, creamy, and perfectly balanced between sweet and tart. The only downside is that it only keeps for about day in the fridge, so plan on making it the night before packing it into someone's lunchbox if that's its destination. Serve it with pita or tortilla chips, breadsticks and cucumber slices, and double the recipe if you're feeding a crowd.

CUCUMBER AND AVOCADO SOUP WITH TOMATO AND BASIL SALAD

Yield Makes 4 servings

Number Of Ingredients 8

1 large English hothouse cucumber, peeled, diced (about 2 1/2 cups)
2 1/2 cups low-fat (1%) buttermilk
1 avocado, quartered, pitted, peeled
4 tablespoons chopped red onion
2 tablespoons chopped fresh basil
1/2 cup seeded chopped tomato
2 teaspoons fresh lime juice
4 tablespoons plain nonfat yogurt

Steps:

  • Combine cucumber and buttermilk in blender. Chop 1/4 of avocado; set aside for salad. Cut remaining avocado into chunks. Add avocado to blender; then add 2 tablespoons red onion and 1 tablespoon basil. Blend until very smooth. Season with salt and pepper. Cover; refrigerate until chilled, about 1 hour.
  • Mix reserved avocado, remaining 2 tablespoons onion and 1 tablespoon basil, tomato and lime juice in small bowl. (Can be prepared 1 day ahead. Cover soup and tomato salad separately and refrigerate.) Ladle cucumber soup into 4 bowls. Dollop each with 1 tablespoon yogurt; top with tomato salad and serve.

Tips:

  • Choose ripe avocados: For the best flavor and texture, use ripe avocados that yield to gentle pressure when pressed. Unripe avocados will be hard and have a green color, while overripe avocados will be mushy and brown.
  • Use fresh basil: Fresh basil adds a vibrant flavor to these bites. If you don't have fresh basil on hand, you can substitute dried basil, but use half the amount as the flavor is more concentrated.
  • Use a sharp knife: A sharp knife will help you cut the avocado, cucumber, and basil cleanly and evenly. A dull knife will tear the ingredients and make them difficult to work with.
  • Chill the bites before serving: Chilling the bites for at least 30 minutes before serving helps them to set and makes them more refreshing.

Conclusion:

These avocado basil cucumber bites are a delicious and healthy snack or appetizer that is perfect for any occasion. They are easy to make and can be customized to your liking. For example, you can add some crumbled feta cheese or chopped walnuts for extra flavor. You can also drizzle the bites with a balsamic glaze or a honey mustard dressing for a more gourmet touch. No matter how you serve them, these avocado basil cucumber bites are sure to be a hit!
