3-4 avocados ( if small i use more)
6-8 slice bacon ( i use thick bacon)
to taste salt
to taste pepper
1/4 c mayonnaise
1-2 tomatoes chopped or sliced optional
1/4 c cilantro fresh and chopped ~ optional
1 Tbsp llemon juice (if not using it all to keep it green)
bread, a nice whole grain bread, grilled or toasted french bread, or i make no knead bread in my dutch oven slice it put it on a tray in the oven with a bit of olive oil drizzled on and rubbed with just a bit of garlic.

Steps:

  • 1. fry bacon until crisp drain on paper towel and crumble.
  • 2. Pit your avocados remove from skin, chop and/or mash in a bowl.
  • 3. season with salt and pepper.
  • 4. Optional: add chopped tomatoes if desired.
  • 5. Serve on a nice whole grain bread, or slices of french bread you toasted in the oven with a bit of olive oil and rubbed with just a bit of garlic, or serve as a dip, or on a salad. I make no knead bread in my dutch oven, slice it and toast. Wraps are good also.
  • 6. Sprinkle with some chopped cilantro if desired... and enjoy!!!!
  • 7. Optional: sliced chicken is good on this also

2 ripe avocados, halved, pitted and peeled
3 scallions, chopped
1 tablespoon lemon juice
Fine salt and freshly ground black pepper
4 slices smoked bacon
4 slices sourdough or crusty white bread, sliced 3/4-inch thick

Steps:

  • Preheat the oven broiler.
  • Mash the avocados in a medium bowl until slightly chunky. Stir in the scallions, lemon juice, 1/2 teaspoon salt and a few grinds of pepper and set aside.
  • Arrange the bacon in a large nonstick skillet over medium heat and cook until brown and crisp, about 4 minutes per side. Transfer to a paper towel-lined plate and reserve the drippings in the skillet. Brush each slice of bread with some bacon drippings. Arrange the bread on a baking sheet, bacon dripping side-up, and broil until lightly toasted.
  • Spread each toast with 1/4 of the mashed avocado, break each piece of bacon in half and top each toast with 2 halves.
