AVOCADO MOUSSE

This avocado mousse is really easy to whip together and has so much rich, tangy, and zesty flavor. Super versatile, my favorite ways to use it are as a taco, burrito bowl, or fajita topping, or switch it up for a salad dressing (it's particularly good in a Cobb salad), a dip for a crudite platter, or spread on a sandwich or burger.

Categories     appetizer

Time 20m

Yield 4 servings

Number Of Ingredients 8

1 garlic clove, chopped
2 limes, juiced
Pinch sugar
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 medium, ripe avocados
1/2 medium white onion, thinly sliced
1 cup fresh picked cilantro leaves

Steps:

  • In a large mixing bowl, add the garlic, lime juice, sugar, and olive oil. Season with salt and pepper, to taste, and give it a quick whisk to combine.
  • Split avocados in half and remove the pit. Spoon out the flesh, put on a cutting board and slice into chunks. Transfer to a serving bowl and add the onion and cilantro leaves. Add the vinaigrette and toss lightly to coat just before serving.

Tips:

  • Use ripe avocados: Ripe avocados are creamier and have a better flavor. To check if an avocado is ripe, gently press on the skin. It should yield to gentle pressure but not be mushy.
  • Use fresh cilantro: Fresh cilantro has a more vibrant flavor than dried cilantro. If you don't have fresh cilantro, you can use 1/2 teaspoon of dried cilantro.
  • Don't over-process the mousse: Over-processing the mousse will make it too thin. Pulse the ingredients in the food processor just until they are combined.
  • Chill the mousse before serving: Chilling the mousse for at least 30 minutes will help it to set and develop its flavor.
  • Serve the mousse with your favorite toppings: Some popular toppings for avocado and cilantro mousse include diced tomatoes, crumbled bacon, chopped nuts, and herbs.

Conclusion:

Avocado and cilantro mousse is a delicious and versatile dish that can be enjoyed as an appetizer, snack, or light meal. It is easy to make and can be tailored to your own taste preferences. With its creamy texture and vibrant flavor, avocado and cilantro mousse is sure to be a hit at your next party or gathering.
