It has lots of room for gardening (my husband, my parents and grandparents, all lived on farms). I'm a second-grade teacher with two boys, 5 and 2, who "help" Mommy cook.

1 can (20 ounces) crushed pineapple, undrained
2/3 cup sugar
1 package (3 ounces) lemon gelatin
1 package (8 ounces) cream cheese, softened
1 cup diced unpeeled apples
1/2 to 1 cup chopped nuts
1 cup chopped celery
1 cup whipped topping
Lettuce leaves

Steps:

  • In a saucepan, combine pineapple and sugar; bring to a boil and boil for 3 minutes. Add gelatin; stir until dissolved. Add cream cheese; stir until mixture is thoroughly combined. ¼ cup hulled pumpkin seeds (pepitas)
1 teaspoon olive oil, or as needed
⅓ cup extra-virgin olive oil
3 tablespoons apple cider vinegar
2 tablespoons white sugar
1 teaspoon Dijon mustard
1 teaspoon mayonnaise
1 teaspoon minced shallot
ground black pepper to taste
3 cups torn romaine lettuce leaves
3 cups torn baby spinach
1 cup dried apple chips
¼ cup dried cranberries
¼ cup crumbled bleu cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Toss pepitas with 1 teaspoon olive oil in a bowl; spread onto a baking sheet.

⅔ cup white sugar
1 (3 ounce) package lemon flavored Jell-O® mix
1 (8 ounce) package cream cheese, softened

1 cup frozen whipped topping, thawed

Steps:

2 tablespoons fresh lime juice
2 teaspoons Dijon mustard
2 teaspoons honey

5 c chopped cored apples
1 c red grapes, halved
1 c celery, chopped fine
1/2 c walnuts or pecans
1 c marshmallows, mini
1/2 c golden raisins
1 c miracle whip
2 Tbsp sugar
8 oz frozen whipped topping, thawed

Steps:

  • 1. Mix apples, grapes, celery, walnuts or pecans, raisins and marshmallows in a large bowl.
  • 2. In a separate bowl mix miracle whip, 2 T. sugar until sugar disolves. Fold in whipped topping. Pour over fruit mixture and mix to coat. Chill 2 hours before serving. Store in air tight container in the refridgerator.

1 pkg lemon gelatin
8 oz cream cheese, softened
