AUTHENTIC ITALIAN TOMATO SAUCE

Categories     Sauce     Tomato     Healthy     Simmer

Yield 10

Number Of Ingredients 13

2 (28 ounce / 800ml) cans tomato puree
1 (28 ounce / 800g) can peeled plum tomatoes
2-3 cloves garlic, crushed or chopped
1 small onion, finely chopped
2 sticks of celery, finely chopped
1 small carrot, finely chopped
6 cloves
2 teaspoons dried basil, or 2 tablespoons fresh, chopped
1 teaspoon salt
1/4 teaspoon fresh ground pepper
1 tablespoon sugar
1/4 cup extra virgin olive oil
1/4 cup grated cheese, parmesan or pecorino romano

Steps:

  • In a large pot, sauté onion, carrot, celery and garlic in olive oil on a medium heat until slightly soft, about 5 minutes. Empty plum tomatoes into large bowl and squash with your hands to break them up. Add all ingredients (including any meatballs or sausage you want to add) to pot, reduce heat until it is just simmering, and simmer for 3 hours. This makes 10 servings or more (depending on how saucy you like your pasta) but freezes well - put into freezer bags in 250g batches, for enough to serve 2.

Tips:

  • Use ripe tomatoes. The riper the tomatoes, the sweeter and more flavorful your sauce will be.
  • Roast the tomatoes before making the sauce. Roasting the tomatoes intensifies their flavor and gives the sauce a smoky, caramelized taste.
  • Use a good quality olive oil. Olive oil is the traditional fat used in Italian cooking and it adds a rich, fruity flavor to the sauce.
  • Don't overcrowd the pan when cooking the sauce. If you add too many tomatoes or other ingredients to the pan at once, they won't cook evenly and the sauce will be watery.
  • Simmer the sauce for at least 30 minutes. This allows the flavors to develop and meld together.
  • Season the sauce to taste. Add salt, pepper, and other spices to taste until the sauce is perfectly seasoned.

Conclusion:

Authentic Italian tomato sauce is a delicious and versatile sauce that can be used on a variety of dishes. It's easy to make and can be customized to your own taste. With a few simple ingredients and a little bit of time, you can create a delicious tomato sauce that will impress your family and friends.
