CHINESE SPARERIBS

Chinese Spareribs image

After searching the internet for a good Chinese Spareribs recipe and not finding any that caught my eye, I decided to make my own. This recipe is pretty simple, and yields tender, juicy, tangy ribs. In Japan, I cooked this in the fish broiler, but it should be fine on the grill or in the oven.

Yield 2

Number Of Ingredients 11

3 tablespoons hoisin sauce
1 tablespoon ketchup
1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon sake
1 teaspoon rice vinegar
1 teaspoon lemon juice
1 teaspoon grated fresh ginger
½ teaspoon grated fresh garlic
¼ teaspoon Chinese five-spice powder
1 pound pork spareribs

Steps:

  • In a shallow glass dish, mix together the hoisin sauce, ketchup, honey, soy sauce, sake, rice vinegar, lemon juice, ginger, garlic and five-spice powder. Place the ribs in the dish, and turn to coat. Cover and marinate in the refrigerator for 2 hours, or as long as overnight.
  • Preheat the oven to 325 degrees F (165 degrees C). Fill a broiler tray with enough water to cover the bottom. Place the grate or rack over the tray. Arrange the ribs on the grate.

TAKEOUT-STYLE CHINESE SPARE RIBS

Takeout-Style Chinese Spare Ribs image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 6h15m

Yield 20 to 24 ribs

Number Of Ingredients 9

1/2 cup hoisin sauce
1/4 cup soy sauce
3 tablespoons dark brown sugar
2 tablespoons honey, plus a bit extra to finish
1 tablespoon five-spice powder
1 teaspoon granulated garlic
1 teaspoon grated fresh ginger
1 teaspoon red food coloring
2 racks spare ribs (8 to 10 pounds, St. Louis-style work best), individually sliced into single ribs

Steps:

  • Mix together the hoisin sauce, soy sauce, brown sugar, honey, five-spice powder, garlic, ginger and food coloring in a metal, non-reactive bowl. Pour the marinade into a large zip-top bag, reserving 1/2 cup on the side for basting later. Add the ribs to the bag and marinate, refrigerated, for at least 3 hours, though longer is better and overnight is ideal.
  • Heat a charcoal or gas grill to 275 degrees F for direct and indirect grilling.
  • Remove the ribs from the marinade (discard the marinade) and place onto a wire rack. Place the rack directly on the cooler side of the grill. Cook until the meat is very tender, basting with the reserved marinade 3 times during the cooking process, 2 to 3 hours.
  • Drizzle the ribs with honey, move them to the direct heat side and quickly char each rib to caramelize.

FALL OFF THE BONE CHINESE SPARERIBS

Fall off the Bone Chinese Spareribs image

I love these! I don't even eat BBQ ribs anymore because of these, maybe one day I'll branch out but these are too good!!!!!

Provided by Jessica K

Categories     Pork

Time 2h40m

Yield 1 rack, 4-6 serving(s)

Number Of Ingredients 9

spareribs (1 rack)
3 garlic cloves, minced
3 tablespoons ketchup
3 tablespoons chili sauce
3 tablespoons soy sauce
3 tablespoons hoisin sauce
3 tablespoons dry sherry
2 tablespoons honey
2 tablespoons grated fresh ginger, I use the jarred stir fry mix of garlic and ginger when i run out of fresh and tastes great, and hav

Steps:

  • First before you do anything get you a really big pot and fill it up with water. I use my big soup stockpot but whatever big pot you have that'll fit the ribs is fine. Heat on burner on medium heat. Next put a bunch of spices and herbs in there, I use garlic salt, ground pepper, thyme, rosemary, and oregano, but whatever u like is fine, this is your beef stock.
  • Put ribs in spiced up water. Now let simmer for about 2-3 hours, till meat is gray and starting to pull away from the edges of the bones. Take ribs out of pot, save liquid for recipes that call for beef stock. Put ribs in 9x13 baking dish or pan, don't forget to grease it!
  • Mix all ingredients listed above in a bowl. Taste, if not to your liking add a little bit of whatever you think will help it out. I usually end up putting in more honey and hoisin. Now brush some of sauce on both sides of ribs and let sit on and absorb for about 20-30 minute.
  • Heat oven to 350 degrees. Brush more sauce on both sides of ribs. Bake for 15 minute Brush more sauce on. Bake 15 more minute. Sauce on ribs should be brown and crispy looking. Serve with sauce if desired and if enough leftover.
  • Enjoy!

1/2 cup hoisin sauce
1 tablespoon sambal oelek or other spicy chili sauce
2 tablespoons malt vinegar
4 scallions, cut into 2-inch pieces
2-inch piece fresh ginger, peeled and cut into 1/4-inch slices
1 rack pork spare ribs, cut into thirds lengthwise
Coarse salt
Napa Cabbage Slaw

  • Preheat oven to 325 degrees. Line a rimmed baking sheet with foil. Tips:

  • Use high-quality spare ribs: Look for ribs that are meaty with a good amount of marbling.
  • Marinate the ribs for at least 30 minutes, but preferably overnight. This helps to tenderize the ribs and infuse them with flavor.
  • Cook the ribs slowly over low heat. This allows the collagen in the ribs to break down, making them fall-off-the-bone tender.
  • Use a meat thermometer to ensure that the ribs are cooked to the desired doneness. The internal temperature should be at least 145 degrees Fahrenheit.
  • Let the ribs rest for a few minutes before serving. This allows the juices to redistribute throughout the ribs.

Conclusion:

Authentic Chinese spare ribs are a delicious and easy-to-make dish that is perfect for any occasion. By following these tips, you can create ribs that are fall-off-the-bone tender and bursting with flavor. So next time you're looking for a crowd-pleasing dish, give this recipe a try!
