Steps:
- Preheat oven to 180°C/350°F (fan 160°C)
- Grease and line a 28x 18cm (lamington pan) / 7" x 11" rectangle pan with baking/parchment paper (Note 2). Have overhang for ease of removal.
- Mix together Base ingredients and press into a pan (I use an egg flip)
- Bake for 15 minutes until the surface is golden. Cool in fridge if you have time (Note 3).
- Lower oven to oven to 160°C/320°F (fan 140°C)
- Place butter, sugar and vanilla in a saucepan over medium low heat. When the butter is melted, whisk to combine with sugar, then just leave it until it comes to a simmer.
- When bubbles appear, add condensed milk. Whisk constantly for 5 minutes (Note 4), until you start getting some big slow bubbles on the base.
- Once bubbles start appearing, whisk for 1 minute, then pour onto Base. Tilt pan to spread evenly.
- Bake for 12 minutes. Don't worry if you get splotchy brown bits (this happens with ovens that don't distribute heat evenly).
- Cool on counter for 20 minutes then refrigerate 30 minutes - bottom of pan should be warm but surface cool (not cold) to touch. (Note 5)
- Place chocolate and oil in a microwave proof bowl. Microwave in 30 second bursts, stirring in between, until chocolate is fully melted (takes me 4 x 30 sec).
- Pour over caramel, spread with spatula. Then gently shake pan to make the surface completely flat.
- Refrigerate 1 hour or until set. Remove from fridge and leave out for 5 minutes to take chill out of chocolate slightly. Then cut into bars or squares to serve!

Steps:
- 1. Heat oven to 350 degrees. Line a 9-by-9-inch baking pan with non-stick aluminum foil, bringing the sides up and over the pan; set aside. 2. In a mixer bowl, beat together 1 cup of the butter (2 sticks) and 1/2 cup of the granulated sugar until light and creamy. Add flour gradually and mix until blended. Place dough into prepared pan and pat down evenly. Bake for 30 minutes or until golden brown. Remove from oven and set aside on wire rack. Turn off oven. 3. Place remaining 1/2 cup butter (1 stick) and remaining 1/2 cup sugar in a medium heavy saucepan over low heat until butter is melted. Add condensed milk and honey, and stir constantly until mixture is very thick and caramel-colored, about 25 minutes. 4. Remove from heat, add walnuts, and stir to combine. Cool for 10 minutes in pan, then pour over baked crust. Set aside to cool. 5. Melt the chocolate in a saucepan over low heat and pour over caramel layer, spreading to edges. Refrigerate at least 3 hours, or overnight. 6. Lift base up with foil and peel off foil. Place on work surface and cut into slices or squares to serve. Makes 24 cookies. Refrigerate, covered, any leftovers. The cookies keep well in refrigerator.
Tips:
- Use a good quality caramel sauce, as this will make a big difference to the taste of the slice.
- Make sure the walnuts are chopped finely so that they distribute evenly throughout the slice.
- If you don't have time to make your own caramel sauce, you can use a store-bought variety.
- You can also add other ingredients to the slice, such as chocolate chips, dried fruit, or crushed biscuits.
- Be careful not to overcook the slice, as this can make it dry and crumbly.
Conclusion:
Australian Walnut Caramel Slice is a delicious and easy-to-make treat that is perfect for any occasion. With its sweet and sticky caramel filling, crunchy walnuts, and buttery shortbread base, this slice is sure to be a hit with everyone who tries it.
