AUSTRALIAN STYLE POTATO SALAD

This is a recipe that I found on the inmamaskitchen website, posted by Margaret Walker, which I am posting here for the Zaar World Tour event. It appealed to me because it is very similar to the potato salad recipe that my mom made for our summertime picnics and potluck gatherings. There is a note at the berginning of the instructions that states there are many varieties of deli-style mustards, and it is best that you not use a smooth mustard for this recipe, but rather you should use a mustard that has a trace of seed still in it.

Tips for the Best Potato Salad:

  • Choose the Right Potatoes: Waxy potatoes like Red Bliss, Yukon Gold, or Baby Potatoes hold their shape well and are less likely to break down when cooked.
  • Cook Potatoes Properly: Boiling the potatoes in salted water enhances their flavor and prevents them from becoming mushy. Ensure they're cooked through but still firm to the bite.
  • Cool Potatoes Completely: Before adding the dressing, let the cooked potatoes cool completely to prevent the salad from becoming watery.
  • Use Fresh Ingredients: Opt for fresh vegetables like celery, carrots, and onion for maximum flavor and crunch.
  • Homemade Dressing: Making your own dressing allows you to control the flavors and adjust them to your preference.
  • Balance Flavors: Strive for a harmonious balance between tangy, creamy, and savory flavors in the dressing.
  • Garnish Generously: Fresh herbs like parsley or chives add a refreshing touch and enhance the salad's visual appeal.
