For ZWT 16, I was searching for recipes to add to our repetoire and came across this recipe that looks delicious and easy to make. (Australian, New Zealand sausage-stuffed puff pastry) Popular in New Zealand and Australia, sausage rolls are eaten for breakfast, lunch or as appetizers at parties and get-togethers. 1 (17 1/3 ounce) package puff pastry
2 lbs bulk pork sausage
1 medium onion, finely chopped
1 cup breadcrumbs
salt and pepper (to season)
1/2 cup milk or 1/2 cup cream
1 egg, beaten with 1 tablespoon water

Steps:

  • 1.Preheat oven to 425°F In a large bowl, mix together the sausage, onion, breadcrumbs, salt, pepper and milk or cream.
  • 2.Unfold the puff pastry onto a lightly floured work surface. Cut each sheet in two lengthwise to make four long rectangles. Form a log of sausage down the center of each puff pastry sheet, leaving a 1-inch edge. Starting from a long edge, roll the puff pastry up and over the sausage, brushing the edge with the beaten egg to seal. Pinch the ends closed.
  • 3.Cut each roll into quarters. Place the rolls seam-side down on a parchment or wax paper-lined baking sheet and brush the tops with the egg wash.
  • 4.Place in the oven and bake for 5 minutes. Reduce heat to 350°F, and bake for another 30 to 35 minutes, or until the pastry is puffed and golden and the sausage is cooked through.
  • 5.Let cool for a few minutes, then serve with ketchup.
  • Variations.
  • •Add extra flavorings to your sausage mix as you like: chopped parsley, thyme, curry powder, crumbled sage, garlic powder, paprika.
  • •Appetizer Portions: Cut each rolled up puff pastry log into 8 portions instead of 4 to make appetizer-sized sausage rolls. Adjust down the cooking time to allow for the smaller size.
  • •Sprinkle the rolls with sesame seeds or paprika before baking.

For the egg wash:
1 frozen package puff pastry
1 1/2 lbs. pork sausage
3/4 c. Italian bread crumbs
1/3 c. milk
1 tsp. minced garlic
1/2 tsp. paprika
salt and pepper, to taste
1 egg
1 Tbsp water

Steps:

  • Be sure to follow the directions on the puff pastry package so your dough is thawed and ready to use. Preheat oven to 425 degrees. Unfold dough onto a lightly floured surface. You should have 2 big squares. Cut each square in half so that you now have 4 long rectangles. Combine the sausage, bread crumbs, milk, garlic, paprika, salt and pepper in a large bowl or food processor and mix until all the ingredients are thoroughly incorporated. Divide the sausage mix evenly into 4 sections and make a long tube down each rectangle pastry. (see picture below) Roll the pastry up over the sausage and pinch the seam together so you have 4 long logs. Cut each log into 4 sections. Then place the sections on a cookie sheet lined with parchment paper or a baking sheet. Mix together the egg wash and brush each roll with it. Then sprinkle on a little paprika. (see picture below) Bake at 425 for only 5 minutes. Then reduce heat to 350 and bake 30-35 more minutes. (I ended up draining some of the grease from the sausage out of the pan part way through the baking time) They should look puffed and golden and the sausage in the center should be cooked through. Remove from pan onto some paper towels to cool. These are traditionally eaten in Australia plain or dipped in ketchup. But a few dips that I thought would be good with these would be- marinara, alfredo sauce, country gravy, or cheese sauce.

  • Use high-quality sausage meat for the best flavor. Look for sausage that is made with fresh, ground pork or beef and seasoned with herbs and spices.
  • Don't overwork the sausage meat mixture. Overworking the meat can make it tough.
