Yield Makes 12

Number Of Ingredients 14

2 1/2 cups unbleached all-purpose flour
2 teaspoons ground ginger
1 teaspoon freshly ground pepper
1 teaspoon freshly grated nutmeg
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, room temperature
1 cup packed light-brown sugar
1/2 cup granulated sugar
1 tablespoon grated peeled ginger
2 large eggs, room temperature
1/4 cup golden syrup, such as Lyle's
1/4 cup chopped crystallized ginger
1/4 cup fine sanding sugar

Steps:

  • Whisk together flour, ground ginger, pepper, nutmeg, baking soda, and salt in a large bowl; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream together butter, brown and granulated sugars, and grated ginger until light and fluffy, about 2 minutes. Add eggs, one at a time, beating well after each addition. Add golden syrup and continue to beat, scraping down sides as necessary, until thoroughly combined. Mix in crystallized ginger. Reduce speed to low and add flour mixture; mix until just combined. Cover with plastic wrap and refrigerate until firm, at least 2 hours.
  • Using a 1/4-cup ice cream scoop, drop dough onto a parchment-lined baking sheet. If dough becomes soft, refrigerate 20 minutes.
  • Roll dough into balls between your palms, then roll in sanding sugar to coat. Place 6 balls each on two fresh parchment-lined baking sheets, spacing at least 2 inches apart. Freeze until firm, about 30 minutes.
  • Meanwhile, preheat oven to 350 degrees. Bake, rotating halfway through, until edges are golden, 17 to 20 minutes. Let cool on sheets 5 minutes, then transfer to wire racks to cool completely. Cookies can be stored in an airtight container at room temperature up to 3 days.

Tips:

  • Use the right ingredients: Make sure you have all the necessary ingredients and that they are of good quality. This will ensure that your cookies turn out delicious.
  • Follow the recipe carefully: Don't skip any steps or substitute ingredients unless you know what you're doing. Following the recipe exactly will help you achieve the best results.
  • Don't overmix the dough: Overmixing the dough will make your cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies at the right temperature: The temperature of your oven will affect the texture of your cookies. Baking them at too high a temperature will make them dry and crumbly, while baking them at too low a temperature will make them soft and chewy.
  • Let the cookies cool completely before storing them: This will help them keep their shape and prevent them from becoming too soft.

Conclusion:

With a little planning and effort, you can easily make delicious Australian cookies at home. Just be sure to follow the tips above and you'll be sure to impress your friends and family with your baking skills.
