Make a delicious Aussie meat pie filled with ground beef, onions and gravy and usually topped with tomato sauce (known as ketchup in the States).

Categories     Entree     Dinner     Pies     Pie

Time 50m

Number Of Ingredients 11

1 tablespoon olive oil
1 medium onion (finely chopped)
14 ounces lean ground beef
1 tablespoon cornstarch
3/4 cup beef stock
1/8 cup tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon Vegemite (or 1 cube vegetable bouillon)
4 sheets pie pastry (frozen, thawed)
1 large egg (beaten)
Ketchup (for serving)

Steps:

  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add 1 medium finely chopped onion and fry for 3 to 4 minutes or until soft and translucent.
  • Add 14 ounces (400 grams) ground beef and cook for 3 to 4 minutes, stirring and breaking up with a wooden spoon until browned. At this point, you can drain the beef, if desired. But it should be quite fat-free if you used lean ground beef.
  • In a small container, whisk together 1 tablespoon cornstarch and 1 tablespoon of the beef stock and set aside.
  • Add remaining beef stock, 1/8 cup tomato paste, 1 tablespoon Worcestershire sauce, and Vegemite or bouillon cube to ground beef in skillet. Stir well to combine.
  • Add reserved cornstarch-water mixture and stir. Bring to a boil, reduce heat to low and simmer, uncovered, for 10 minutes or until thick. Remove from heat and cool.
  • Heat oven to 425 F (220 C).
  • Place pie dough on a lightly floured surface. Place the pie tin on top and cut a circle around it. Repeat process to make 3 more circles-these are the pie tops. Cover loosely with plastic wrap and set aside.
  • On the same lightly floured surface, place remaining pie dough and a pie tin on top and cut a circle that's slightly larger than tin (about 1/2 inch bigger)-this is the pie base. Repeat process to make 3 more bases.
  • Press base pastry into pie tins and press up the sides. Fill with cooled meat mixture. Brush rims with water.
  • Place pie tops over meat. Use a fork to press edges to seal. Trim edges if necessary. Brush tops with beaten egg.
  • Place pies on a baking tray to catch any drips and bake for 20 minutes or until golden. Serve with tomato sauce (ketchup).

AUSSIE MEAT PIES, MADE QUICK

Aussie Meat Pies, Made Quick image

Australia has these cool meat pies made of pastry crust stuffed with a slowly simmered, finely ground meat mixture. The pies can be topped with ketchup, and man, are they good! They taste like a ritzy version of a sloppy Joe. This is my sped-up version of a down-under favorite. Serve the pies with a green salad.

Yield 4 servings

Number Of Ingredients 14

2 sheets frozen puff pastry, defrosted but kept chilled (recommended brand: Pepperidge Farm)
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil (EVOO) (once around the pan)
2 tablespoons unsalted butter, cut into pieces
1 1/2 pounds ground beef
1 medium onion, finely chopped
2 tablespoons all-purpose flour
2 tablespoons Worcestershire sauce (eyeball it)
1 rounded tablespoon tomato paste
1 rounded tablespoon brown sugar
1 cup beef stock or broth
1 tablespoon grill seasoning, such as McCormick's Montreal Steak Seasoning
Ketchup, for garnish
2 tablespoons chopped fresh chives

Steps:

  • Preheat the oven to 400°F.
  • With a sharp knife, cut the thawed but chilled puff pastry sheets into 4 squares each, 8 squares total, and arrange on a cookie sheet. Season the squares with a little salt and pepper. Bake the puff pastry according to the package directions, or until golden brown all over, about 12 to 15 minutes.
  • Heat a medium skillet over medium-high heat. Let it get really hot so the meat will caramelize when it hits the pan. Add the EVOO, then the butter. When the butter melts into the oil, add the beef and really work at breaking it up as it browns-get the bits all nice and tiny. Add the onions and cook for 5 minutes. Stir in the flour. Cook the mixture a minute more. In a small bowl, combine the Worcestershire with the tomato paste and brown sugar, then stir in the stock. Whisk the seasoned stock into the pan. Stir into the meat and combine. Season the meat with the grill seasoning and reduce the heat to low.
  • When the pastry squares are ready, assemble the pies. Place a square of pastry in the bottom of a shallow bowl. Top with one quarter of the meat mixture and another square. Place a large dollop of ketchup in the center of the top pastry and sprinkle the "pies" with chives to garnish, then serve.
  • You could also use refrigerated pie crusts instead of puff pastry sheets.

AUSSIE MEAT PIES

A recipe I found while searching for recipes for ZWT - Australia on Taste.com.au. Here is what was stated: Our reinvention of the the humble meat pie features salty bacon and a fresh thyme.

Provided by diner524

Categories     Savory Pies

Time 1h20m

Yield 8 pies, 8 serving(s)

Number Of Ingredients 12

900 g beef rump, trimmed, chopped
2 tablespoons olive oil
1 medium brown onion, finely chopped
2 slices middle bacon, trimmed, chopped
2 tablespoons tomato paste
2 tablespoons plain flour
2 cups salt-reduced beef stock
1 tablespoon fresh thyme leave
4 sheets frozen ready-rolled shortcrust pastry, partially thawed, halved diagonally
2 sheets frozen premade puff pastry, partially thawed, quartered
1 egg, lightly beaten
tomato sauce, to serve

Steps:

  • Process steak until mixture resembles mince. Heat oil in a large frying pan over medium-high heat. Add onion and bacon. Cook, stirring, for 3 minutes or until golden. Add mince. Cook, stirring with a wooden spoon to break up mince, for 6 to 8 minutes or until browned.
  • Add tomato paste and flour. Cook, stirring, for 1 minute or until combined. Add stock and thyme. Stir to combine. Bring to the boil. Reduce heat to medium-low. Simmer for 30 minutes or until sauce has thickened and meat is tender. Season with pepper. Remove from heat.
  • Preheat oven to 200°C/180°C fan-forced. Line eight 7.5cm round pie moulds with shortcrust pastry. Trim excess. (I would bake the crust for 5-8 minutes before filling with meat mixture to have a flaky crust) Fill cases with steak mixture. Top with puff pastry. Trim excess. Press edges together with a fork to seal. Using a small sharp knife, cut a small cross in pie tops. Brush with egg. Bake for 25 to 30 minutes or until golden. Serve with sauce.

Tips:

  • Use high-quality ingredients: The quality of your ingredients will greatly impact the taste of your meat pies. Use fresh, lean beef mince, and avoid using mince that is too fatty.
  • Season your mince well: Don't be afraid to season your mince generously. Use a combination of salt, pepper, garlic powder, onion powder, and paprika. You can also add other herbs and spices to taste, such as oregano, thyme, rosemary, or cumin.
  • Cook your mince slowly: The slower you cook your mince, the more tender it will be. Cook it over low heat for at least 30 minutes, stirring occasionally.
  • Make sure your pastry is flaky: The pastry is just as important as the filling in a meat pie. Use a good quality puff pastry or shortcrust pastry, and make sure it is nice and flaky. You can also make your own pastry from scratch if you prefer.
  • Don't overfill your pies: When you are filling your pies, be careful not to overfill them. This will make them difficult to seal properly and they will be more likely to leak.
  • Bake your pies until they are golden brown: Bake your pies in a preheated oven until they are golden brown. This will ensure that the pastry is cooked through and the filling is nice and hot.

Conclusion:

Aussie meat pies are a delicious and hearty meal that can be enjoyed by people of all ages. They are perfect for a quick and easy lunch or dinner, and they can also be made ahead of time and frozen for later. With a little bit of planning, you can easily make delicious Aussie meat pies at home.
