AUSSIE CARROT CAKE

Aussie Carrot Cake image

I got this Carrot Cake Recipe when I was living in Alice Springs, somewhere between 85' and 87' I have made it so many time I have broken a barrel to a salad shooter. It is really, really good and not very hard to make at all. I usually shred extra carrots and stick them in the freezer for an extra cake a month or two down the road.

As the name implies, the shredded carrots give this easy Carrot Cake recipe its bright color, but the taste is subtle. Warm cinnamon and vanilla help create a swoon-worthy flavor as you bite into the moist, dense cake. One of the best parts of Carrot Cake is the famous sweet-and-tangy cream cheese frosting. 1 1/2 cups granulated sugar
1 cup vegetable oil
3 eggs
2 cups Gold Medal™ All-Purpose Flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt

1/4 cup butter or margarine, softened
2 to 3 teaspoons milk
1 teaspoon vanilla
4 cups powdered sugar
Nutmeg, if desired

Tips:

  • For a moist and flavorful carrot cake, use freshly grated carrots. Avoid pre-shredded carrots, as they tend to be dry.
  • Don't overmix the batter. Overmixing can result in a tough, dense cake.
  • Be generous with the spices. Carrot cake is known for its warm, spicy flavor. Don't be afraid to add a little extra cinnamon, nutmeg, and ginger.
  • Use a combination of nuts. Walnuts, pecans, and almonds are all popular choices for carrot cake. You can also add dried fruits, such as raisins or cranberries.
  • Make sure the cream cheese frosting is well-chilled before spreading it on the cake. This will help it to hold its shape and prevent it from becoming too runny.

Conclusion:

Carrot cake is a classic dessert that is perfect for any occasion. It is moist, flavorful, and packed with spices. With a cream cheese frosting, carrot cake is sure to be a hit with everyone who tries it. So next time you are looking for a delicious and easy-to-make dessert, give carrot cake a try.
