Categories     One Dish Meal

Time 22m

Yield 6 serving(s)

Number Of Ingredients 19

2 slices white bread, without the crusts, torn into pieces
1/4 cup milk
3/4 lb ground beef
3/4 lb ground pork
1 small red onion, grated
1 egg
1/8 teaspoon ground allspice
1/4 teaspoon ground cardamom
1/8 teaspoon ground ginger
salt
ground black pepper
butter, for frying meatballs
vegetable oil, for frying meatballs
2 cups beef stock
2 tablespoons flour
1/4 cup heavy cream
salt
ground black pepper
fresh parsley, for garnish

Steps:

  • In a small bowl, soak the bread in the milk until soft.
  • In a large bowl, combine all the meatball ingredients except the butter and oil, and add the soaked bread.
  • Mix thoroughly until smooth, it's best to use your hands for this.
  • Shape into small, golf-ball size meatballs (by dipping your hands in cold water, the meatballs won't stick to your hands.)
  • Heat butter and oil in a large, deep skillet over medium-high heat.
  • Add the meatballs, about 8 to 10 at a time, and gently brown on all sides, about 5 to 7 minutes.
  • Shake the skillet now and then so meatballs stay round and brown evenly.
  • Place them on a heated baking pan in a low oven to keep warm.
  • To make gravy, deglaze the skillet with 1 cup of the stock, letting it simmer for 5 minutes while scraping the bottom of the skillet with a spatula. Strain the gravy into a clean saucepan and add the remaining 1 cup of stock. In a small bowl, mix the flour with 1/4 cup of cold water until smooth. Whisk flour mixture into warm gravy, and let simmer, whisking constantly to prevent lumps, until thickened slightly, about 3-5 minutes. Add the cream and season with salt and pepper.

Swedish Meatball Noodle Bake image

Egg noodles and meatballs are cloaked in a creamy shallot sauce, baked until bubbly, and served with lingonberry jam for a twist on Swedish Meatballs. Bonus: This home-style dish is on the table in less than an hour.

Provided by By Betty Crocker Kitchens

Categories     Dinner

Time 40m

Yield 8

Number Of Ingredients 10

12 oz uncooked wide egg noodles
1/2 cup sliced shallots (about 2 medium)
4 tablespoons unsalted butter
1/4 cup Gold Medal™ all-purpose flour
1 carton (32 oz) Progresso™ chicken broth
1/4 cup heavy whipping cream
Salt and pepper to taste
1 1/2 lb frozen cooked beef meatballs
2 tablespoons chopped fresh parsley leaves
Lingonberry jam

Steps:

  • Heat oven to 375°F. Lightly butter 13x9-inch (3-quart) baking dish; set aside. Heat 6-quart pot of water to boiling; add egg noodles, and cook 5 minutes. Noodles should still be firm through the middle. Drain, and set aside.
  • While noodles are boiling, cook shallots and butter in 3-quart saucepan about 3 minutes, stirring occasionally, until shallots are soft. Stir in flour to make a roux; cook 60 seconds. Gradually stir in chicken broth, stirring constantly, until mixture is smooth and all stock is mixed in. Heat to simmering, stirring constantly, until thickened. Remove from heat; stir in whipping cream. Season with salt and pepper to taste.
  • In baking dish, mix noodles, sauce and meatballs, coating well. Bake 20 to 30 minutes or until sauce is bubbling and thickened. Cool 10 minutes; serve with parsley and lingonberry jam.

Tips:

  • Use ground beef and pork for a flavorful meatball. You can also use all beef or all pork, but the combination of the two meats gives the meatballs a more complex flavor.
  • Grate the onion instead of chopping it. This will help the onion blend into the meatballs and prevent it from overpowering the other flavors.
  • Use panko breadcrumbs instead of regular breadcrumbs. Panko breadcrumbs are lighter and airier than regular breadcrumbs, which makes them perfect for meatballs.
  • Don't overmix the meatball mixture. Overmixing will make the meatballs tough.
  • Brown the meatballs in a pan before baking them. This will help to keep them moist and juicy.
  • Use a flavorful sauce. The sauce is what really makes this dish special. Use a sauce that you love and that complements the meatballs.
  • Serve the meatballs with mashed potatoes, egg noodles, or rice. These are all classic Swedish sides that go perfectly with meatballs.

Conclusion:

Auntie Lori's Swedish Meatballs Casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. The meatballs are moist and flavorful, and the sauce is rich and creamy. This dish is sure to be a hit with your family and friends.
