AUNT ROSIE'S EGGLESS RAISIN CAKE

Aunt Rosie's Eggless Raisin Cake image

This was a recipe from Hilma Murphy, my best friend's mother. She passed away when I was 12. She always made this cake for us, and after her death, we looked through her recipes and I copied this one down. Easy to make, definitely a comfort cake that is wonderful when still warm!

Time 1h5m

Yield 12 squares

Number Of Ingredients 9

1 cup raisins
2 cups water
1/2 cup margarine
1 3/4 cups flour
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 teaspoon baking soda
1 cup sugar

Steps:

  • In large saucepan boil 1 cup raisins with 2 cups water for 10 minutes.
  • Take from fire, add 1 stick margarine and let cool to room temperature.
  • In same saucepan with liquid, raisins and butter, stir in remaining ingredients until smooth.
  • Bake in 10x7 pan at 350 degrees for 30-35 minutes, or until center tests done.

Tips:

  • Ensure all ingredients are at room temperature: This allows them to combine smoothly and evenly, resulting in a well-textured cake.
  • Cream butter and sugar thoroughly: This creates a light and fluffy batter, which is essential for a good rise.
  • Gradually add dry ingredients: Adding them all at once can result in a lumpy batter.
  • Do not overmix the batter: Overmixing can toughen the cake.
  • Bake the cake at the correct temperature: A too-high temperature can cause the cake to brown too quickly, while a too-low temperature can result in a dense, undercooked cake.
  • Let the cake cool completely before frosting: This prevents the frosting from melting.
  • Store the cake in an airtight container at room temperature: This will keep it fresh for several days.

Conclusion:

Aunt Rosie's Eggless Raisin Cake is a delicious and moist cake that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. With its simple ingredients and classic flavor, this cake is sure to become a favorite.
