1 pound cubed beef stew meat
1 (15.25 ounce) can whole kernel corn, undrained
1 (15 ounce) can green beans
1 (15 ounce) can carrots with juice
1 (15 ounce) can sliced potatoes with juice
1 (28 ounce) can crushed tomatoes
1 (1.25 ounce) package beef with onion soup mix
salt and pepper to taste

Steps:

  • Place meat, corn, green beans, carrots, potatoes, tomatoes, soup mix, and salt and pepper to taste into the slow cooker; stir to combine.
  • Cook on LOW for at least 6 hours. Add water if necessary.

1 bone-in shank ham
2 1/2 cups all-purpose flour
1 teaspoon salt
5 eggs
2 ounces ham base
Two 15-ounce cans green beans
1 quart cubed russet potatoes
One 12-ounce can evaporated milk
1 cup sour cream
3 tablespoons heavy cream
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder, or to taste

Steps:

  • For the ham starter: Trim meat off the bone. Place meat and bone in a pressure cooker and cover with water. Pressure cook for 45 minutes. Release pressure, then clean and chop meat and strain broth. This can be divided into 4 portions of starter. Freeze 3 of the portions for future use and set the remaining portion aside.
  • For the glace: Put flour and salt in food processor. While it's running, stream in the eggs. Mix thoroughly. Put bench flour on a table, then dump dough out and knead to combine. Let rest 20 minutes. Flour table again and roll to about 1/4-inch thick, then cut into small squares with a pizza cutter. Make sure there's enough flour so the dumplings don't stick together. Rough them up in your hands to make them rustic looking. Put into a dry strainer and shake off excess flour.
  • For the soup: Combine the reserved ham starter, ham base, green beans and their juice and potatoes in a pot. Add water to fill about three-quarters of the way. Bring it all to a boil. Add the glace directly to the pot and cook until they float.
  • Combine the evaporated milk, sour cream and heavy cream in a separate bowl. Add some hot broth and whisk until completely smooth. Add the tempered cream mixture to the soup. Add salt, pepper and garlic powder to taste. Let simmer together for 45 minutes.

1 lb chuck steak, cubed
1 lb sirloin steak, cubed
salt and pepper
3 -4 cups water
8 ounces frozen corn, thawed in microwave
8 ounces frozen green beans, thawed in microwave
1 1/2 cups fresh carrots, cubed
1 (14 1/2 ounce) can stewed tomatoes
4 medium potatoes, chopped
1 (8 ounce) can tomato sauce
1 (14 ounce) can beef broth
1 teaspoon parsley flakes (fresh herbs are hard to find in my area)
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/8 teaspoon tarragon
1/4 teaspoon chili powder
1/8 teaspoon cumin
ground cloves

Steps:

  • I use kitchen shears to cube and trim fat.
  • Base: The 3 or 4 cups of water depends on how much evaporation your cooker creates. Simmer on high for 2 1/2 hours.
  • After adding veggies and spices, stir and simmer until you are pleased with the taste. Approximately another 2 1/2 to 3 hours.
  • Note: If I want to reduce cook time on this recipe I will sometimes saute` the celery and carrots before adding to the cooker.
  • I usually serve corn fritters or cornbread with this soup.

1 tablespoon extra virgin olive oil
1 pound boneless chuck roast or beef stew meat (cut into 1-inch cubes)
2 teaspoons kosher salt (divided)
¼ teaspoon black pepper
3-4 cups low sodium beef broth (divided)
1 small yellow onion (diced)
2 cloves garlic (minced (about 2 teaspoons))
4 large carrots (peeled and finely chopped)
2 Yukon gold potatoes (peeled and diced)
2 parsnips (peeled and diced)
2 ribs celery (diced)
1 can (14.5 ounces) diced tomatoes
1 can (8 ounces) tomato sauce
3 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
½ teaspoon smoked paprika
1/2 teaspoon granulated sugar
1 cup peas (fresh or frozen (no need to thaw))
Chopped fresh parsley (optional for serving)

Steps:

  • In a large skillet, heat the oil over medium high. Add the beef and sprinkle with 1 teaspoon salt and pepper. Brown the beef on all sides, disturbing it as little as possible on each side so that it develops nice coloring. Once the beef is lightly browned (it won't be all the way cooked through), remove it to a 6-quart slow cooker.
  • To the pan, add the onion. Cook and stir until the onion is beginning to soften, about 3 minutes. Stir in the garlic and let cook 30 seconds. Splash in about 1/2 cup the beef broth and scrape up any browned bits that have stuck to the bottom (this is flavor!). Let the broth reduce for 2 minutes, then transfer the entire mixture to the slow cooker.
  • To the slow cooker, add the carrots, potatoes, parsnips, and celery.

1 pound ground sirloin beef
1 (15.25 ounce) can whole kernel corn, drained

3 carrots, cut into bite-size pieces
2 potatoes, peeled and cut into bite-size pieces
1 onion, chopped
1 large stalk celery, cut into bite-size pieces

2 bay leaves
