Tips:

  • Properly measure your ingredients: Baking is a science, and precise measurements are crucial for success. Use a kitchen scale for accurate measurements, especially for ingredients like flour and sugar.
  • Use room-temperature ingredients: This helps ingredients blend together smoothly, resulting in a well-mixed batter. Take eggs, butter, and milk out of the fridge about an hour before baking.
  • Cream the butter and sugar until light and fluffy: This incorporates air into the mixture, creating a lighter, more tender cake. Cream the butter and sugar for at least 2 minutes, or until the mixture is pale yellow and fluffy.
  • Gradually add the eggs: Adding the eggs all at once can cause the batter to curdle. Instead, beat in the eggs one at a time, mixing well after each addition.
  • Don't overmix the batter: Overmixing can result in a tough, dense cake. Mix the batter just until the ingredients are combined. A few lumps are okay.
  • Bake the cake in a preheated oven: This ensures that the cake bakes evenly. Preheat the oven to the desired temperature before placing the cake in.
  • Don't open the oven door during baking: This can cause the cake to fall. Resist the urge to peek! Allow the cake to bake undisturbed until a toothpick inserted into the center comes out clean.
