Sweet Potato Fries with Aunt TC's Secret Sauces image

What's my secret for super-crispy sweet potato fries? I actually have two. First, I soak the potatoes in cold water to remove the excess starch. Then, I give them a toss in a cornstarch and seltzer water mixture. The cherry on top? I dust these with a spicy-sweet spice blend and serve them with two different awesome sauces. Bet you can't eat just one!

Simple Crustless Sweet Potato Pie image

This recipe is pretty versatile. I used a can of Farmer's Market sweet potato puree, and you can easily swap out for a can of squash puree or pumpkin. Unsweetened soymilk does just fine in this too, I just happened to have vanilla on hand and think that made it a little sweeter.

AUNT MARY'S SWEET POTATOES

AUNT MARY'S SWEET POTATOES image

Categories     Potato     Side     Thanksgiving

Yield 8

Number Of Ingredients 9

6 medium sweet potatoes
1/2 cup butter, cubed
3/4 cup sugar
1 can (20 ounces) crushed pineapple, drained
2 Eggs, beaten
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
15 large marshmallows

Steps:

  • Place sweet potatoes in a large kettle and cover with water; bring to a boil. Boil gently until potatoes can easily be pierced with the tip of a sharp knife, about 30-45 minutes. Drain; cool slightly. Peel potatoes and place in a large bowl; mash. Stir in butter and sugar until butter is melted. Add pineapple, eggs, vanilla, nutmeg and salt. Spoon into a greased 2-qt. baking dish. Top with marshmallows. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted near the center comes out clean. Yield: 8 servings.

Tips:

  • Select the Right Sweet Potatoes: Choose firm and plump sweet potatoes with smooth skin and a deep orange color. Avoid those with blemishes or bruises.
  • Prick the Potatoes: Before baking, use a fork to prick the sweet potatoes several times. This allows steam to escape and prevents them from bursting.
  • Don't Overcook: Sweet potatoes are best when cooked until tender but not mushy. Check them with a fork or knife to ensure they are done.
  • Enhance Flavor: Rub the sweet potatoes with butter, olive oil, or melted coconut oil before baking. This helps caramelize the skin and adds a touch of richness.
  • Add-Ins and Toppings: Feel free to customize your sweet potatoes with various toppings and mix-ins. Popular options include brown sugar, marshmallows, pecans, maple syrup, and cinnamon.

Conclusion:

Aunt Mary's Sweet Potato recipes offer a delightful and versatile way to enjoy this nutritious vegetable.
