AUNT FANNY’S BAKED SQUASH

Categories     Vegetable     Side     Bake

Yield 6-8 people

Number Of Ingredients 8

3 lbs. yellow summer squash
½ cup chopped onion
½ cup cracker meal or bread crumbs (I use Progresso Italian bread crumbs).
½ tsp. Black pepper
½ tsp. Salt (Salt and pepper may be increased to suit taste).
2 eggs
1 stick of butter
3 tbsp. Sugar

Steps:

  • Wash and cut up squash. Boil squash and onion together until tender, drain thoroughly, then mash. Add all ingredients except ½ of the butter to squash. Melt remaining butter. Pour mixture in baking dish, then spread melted butter over top and sprinkle with cracker meal or bread crumbs. Bake in 375 oven for approximately one hour or until brown on top.

Tips:

  • Choose the right squash: For this recipe, use young, tender yellow squash. Avoid large, mature squash, as they can be tough and bland.
  • Prepare the squash properly: Wash the squash thoroughly and cut it into 1-inch thick slices. If the squash has a thick skin, peel it before slicing.
  • Use fresh herbs: Fresh herbs, such as basil, thyme, and oregano, add a delicious flavor to the squash. If you don't have fresh herbs on hand, you can use dried herbs, but use half the amount.
  • Don't overcook the squash: Squash is best when it is cooked until it is tender but still has a slight bite to it. Overcooking will make the squash mushy.
  • Serve the squash immediately: Squash is best served immediately after it is cooked. If you need to make it ahead of time, cook it just until it is tender and then let it cool completely. Store the squash in an airtight container in the refrigerator for up to 3 days.

Conclusion:

Aunt Fanny's Baked Yellow Squash is a simple, yet delicious, side dish that is perfect for any occasion. The squash is tender and flavorful, and the Parmesan cheese and bread crumbs add a crispy, golden-brown topping. This dish is sure to be a hit with everyone at your table.
