Provided by Georgina Fuggle

Categories     Dinner, Lunch, Main course, Supper

Time 1h10m

Number Of Ingredients 17

4 aubergines, cut into 5mm-1cm slices
3 tbsp vegetable oil
2 tbsp coconut oil
2 large onions, chopped
3 garlic cloves, crushed
1 tbsp black mustard seeds
½ tbsp fenugreek seeds
1 tbsp garam masala
¼ tsp hot chilli powder
1 cinnamon stick
1 tsp ground cumin
1 tsp ground coriander
2 x 400g cans chopped tomatoes
200ml coconut milk
sugar, to taste
2 tbsp flaked almonds
small bunch coriander, roughly chopped (optional)

Steps:

  • Heat oven to 220C/200C fan/gas 7. Generously brush each aubergine slice with vegetable oil and place in a single layer on a baking tray, or two if they don't fit on one. Cook on the low shelves for 10 mins, then turn over and cook for a further 5-10 mins until they are golden. Reduce the oven to 180C/160C fan/gas 4.
  • Heat the coconut oil in a large, heavy-based frying pan and add the onions. Cover and sweat on a low heat for about 5 mins until softened. Add the garlic, mustard seeds, fenugreek seeds, garam masala, chilli powder, cinnamon stick, cumin and ground coriander. Cook for a few secs until it starts to smell beautiful and aromatic.
  • Pour the chopped tomatoes and coconut milk into the spiced onions and stir well. Check the seasoning and add a little sugar, salt or pepper to taste.
  • Spoon a third of the tomato sauce on the bottom of a 2-litre ovenproof dish. Layer with half the aubergine slices. Spoon over a further third of tomato sauce, then the remaining aubergine slices, and finish with the rest of the sauce. Sprinkle over the flaked almonds and coriander (if using), reserving some to serve, and bake for 25-30 mins. Serve garnished with more coriander.

Make and share this Italian Spiced Olives recipe from Food.com.

Provided by Diana Adcock

Categories     Fruit

Time 5m

Yield 1 jar

Number Of Ingredients 9

1 can pitted black olives, drained
1 teaspoon grated lemon, zest of
2 cloves garlic, minced
1 teaspoon italian seasoning
1/4 teaspoon ground black pepper
1/8 teaspoon cayenne pepper
1 teaspoon balsamic vinegar
1 teaspoon fennel seed
extra virgin olive oil

Steps:

  • Combine all ingredients except oil in a clean jar-shake gently, top with olive oil, shake again and store in the fridge for up to 1 month.

Tips:

  • Select plump, firm olives: Choose olives with a smooth, unblemished surface. Avoid olives that are wrinkled or have soft spots.
  • Pit the olives properly: Use an olive pitter to remove the pits without crushing the olives.
  • Use fresh herbs and spices: Fresh herbs and spices provide the best flavor. If you don't have fresh herbs, you can use dried herbs, but use half the amount.
  • Don't overcrowd the jar: Pack the olives, garlic, orange zest, sun-dried tomatoes, and herbs into the jar without overcrowding it. The olives should be submerged in the oil.
  • Use a good quality olive oil: The quality of the olive oil will greatly affect the flavor of the olives. Choose a high-quality extra virgin olive oil.
  • Let the olives marinate: The longer the olives marinate, the more flavorful they will be. Let them marinate for at least 24 hours, but they can be marinated for up to 2 weeks.

Conclusion:

Auberge spiced olives with garlic, orange and sun-dried tomatoes are a delicious and versatile appetizer or snack. They are easy to make and can be stored in the refrigerator for up to 2 weeks. Serve them with crackers, cheese, or vegetables, or use them as a topping for salads or pizzas. Experiment with different herbs and spices to create your own unique flavor combinations. Enjoy!
