I am not sure if this is already a known recipe but I came up with this myself and I have made it for several family members and it is a hit!!! it is soooooo tasty and flavorful!!! I serve it with "fried rice" made out of cauliflower, which I will post soon!! sooo good I say!!!

Number Of Ingredients 8

1 lb chicken breasts, boneless and skinless
1-2 Tbsp olive oil, extra virgin
1/4 c chicken broth, low salt
1 Tbsp garlic powder
1 Tbsp paprika
1 c salsa - low carb
1/2 c sour cream regular
1/4 c * optional - sharp cheddar cheese

Steps:

  • 1. Cut chicken up into bit size pieces, add spices.(you can always use what you like)
  • 2. add oil to pan and cook on each side until brown. add in chicken broth and cook until done.
  • 3. mix salsa and sour cream until well mixed.
  • 4. add mixture to chicken and cook until desired thickness!
  • 5. *optional - add 1/4 cup of fine sharp cheddar cheese. ( I do this sometimes!)
  • 6. serve alone or over a low carb healthy side, example - cauliflower fried rice, cauliflower mashed potatoes!

4 ounces bacon, nitrate free
1/2 yellow onion, diced
6 eggs
3/4 cup cream, heavy
2 (10 ounce) boxes spinach, thawed and drained
1/2 lb gruyere cheese, shredded
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Heat oven to 350 and butter your deep pie pan or your muffin tins.
  • Cook bacon until crisp, drain and coarsely chop.
  • Use one tbsp of drippings to saute onions for 5 minutes until soft but not brown.
  • Combine eggs, cream, spinach, cheese, salt and pepper.
  • Stir in bacon and onion.
  • Pour mixture into prepared pan.
  • Bake 1 hour 15 minutes (takes about 1 hour in muffin tins).
