3 tablespoons fresh lemon juice
1/3 cup olive oil

6 cups mixed salad greens, washed
1 small avocado, peeled, pitted, and cut into 1-inch cubes
1 tomatoes, cored, seeded and chopped
1 small cucumber, seeded and diced
2 tablespoons red onions, finely chopped

Steps:

  • In a small dry skillet over low heat, toast ground cumin 2 minutes or until fragrant, stirring occasionally. Add lemon juice and whisk well. Add oil in a thin, steady stream, whisking until blended. Add salt and pepper to taste. In a large salad bowl, combne greens with 1/4 cup dressing; toss to coat. Place on serving plates. Steps:

2 ripe avocados
1 pound cucumbers (such as Persian or English), trimmed and thinly sliced
2 green, red or purple scallions, trimmed and thinly sliced
Kosher salt (such as Diamond Crystal) and black pepper
Toasted sesame seeds, for topping
