This easy low carb keto Crustless Spinach Bacon Quiche with bacon adapted from the original Atkins quiche recipe is great for those following the Atkins Induction phase (phase 1).

1/3 pound bacon, cooked and chopped, ((150 g))
16 ounce bag frozen spinach, thawed and squeezed dry, ((453.5 g))
6 large eggs
2 ounces onion, thinly sliced or minced, ((about 1/4 of a medium onion) (56.5 g))
3/4 cup heavy cream ((177.4 ml))
8 ounces Swiss or cheddar cheese, grated ((226.7 g))
3/4 teaspoon salt
1/4 teaspoon pepper
1 pinch nutmeg
1 teaspoon lemon zest (optional)

Steps:

  • Cook the bacon until crisp and chop. I do a whole pound in the oven and only use 1/3 for the recipe.
  • Grease a pie plate or 8x8 glass dish. Preheat oven to 350 degrees F.
  • Thaw the spinach and squeeze dry. Slice the onion very thinly into half rounds or mince. Grate the cheese.
  • Put all of the ingredients into a large bowl and mix with a hand mixer until totally combined. Pour into the prepared pan and spread with a rubber spatula. Place into the middle of the oven and cook for 40 minutes.
  • Serve warm. Refrigerate up to 1 week or freeze up to 3 months.
  • Serves 6 at 4 net carbs per person.

Crustless quiche is a no brainer in our house. We regularly throw together leftover vegies, a little cheese, and eggs fresh from our chickens together, pop into the oven and Voila! Breakfast for everyone! The caramelized onion with spinach and Gruyere is my all-time favorite. I usually use fresh spinach but the frozen box is easy, too.

1 -2 onion, peeled and sliced
1 (10 ounce) box frozen spinach, thawed
1 cup gruyere, grated
4 eggs
1 1/2 cups milk (or cream)
nutmeg
salt and pepper
canola oil

Steps:

  • Preheat oven to 375 degrees.
  • With a little canola oil in a frying pan over medium high heat caramelize the onions, stirring occasionally. This takes about 15-20 minutes.
  • Squeeze the moisture out of the thawed spinach by wrapping it in a dish towel and squeezing.
  • Beat the eggs and add the milk and whisk well.
  • Season the egg mixture with salt and pepper and a few grinds of fresh nutmeg.
  • Spray or wipe oil all over a deep pie dish.
  • When the onions are well caramelized, place evenly over bottom of pie dish then evenly spread the spinach over the onions and follow up with the cheese.
  • Pour the egg mixture over the top and pop into the oven.
  • Bake until firm in the middle, about 40-45 minutes.
  • Serve with fresh fruit and popovers hot from the oven!

Since my SO is on a modified low carb diet and I'm not, I wanted to come up with something Italian that we both would enjoy. And this seemed to fit the bill, please feel free to add or even omit some of the things you would like instead. For this recipe a smoked Italian sausage was used. 1/2 lb fully cooked Italian sausage
1/3 cup finely chopped onion
1/3 cup finely chopped green pepper
1 tablespoon margarine
1 cup milk
5 large eggs
1/2 teaspoon italian seasoning
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 cup mozzarella cheese, divided

Steps:

  • Preheat oven to 350°F.
  • Place margarine in a quiche dish or a deep dish pie plate, place in oven and let melt for about 3 to 5 minutes.
  • While margarine is melting, lightly brown sausage, onion and green pepper for about 10 minutes or until onion and pepper is slightly soft, drain if needed.
  • Beat together eggs, milk, Italian seasoning, salt, and pepper until light and slightly foamy.
  • Then add in sausage mixture, and 3/4 cup of mozzarella cheese.
  • Pour into dish, and top with remaining cheese.
  • Bake for 25 to 30 minutes or until center is puffy.
  • Test for doneness with a toothpick inserted between the center and edge of pan.
  • Let set for 10 minutes.
  • This will serve 6 with a salad or 4 without a salad.

6 ounces bacon, diced
½ pound asparagus, cut into 1-inch pieces
4 ounces baby bella (cremini) mushrooms, sliced
4 ounces shredded Swiss cheese
1 ½ cups heavy whipping cream
4 large eggs
¼ teaspoon salt
freshly ground black pepper to taste

Steps:

  • Position oven rack to center position. Preheat oven to 400 degrees F (200 degrees C). Butter a 10-inch pie plate.
  • Heat a large skillet over medium heat; cook and stir bacon in the hot skillet until crisp, 5 to 10 minutes. Remove bacon and drain all but 2 tablespoons grease from skillet. Cook and stir asparagus and mushrooms in the remaining bacon grease until asparagus is tender, about 5 minutes.
  • Remove skillet from heat and toss bacon into asparagus mixture. Spread asparagus-bacon mixture into the prepared pie pan. Sprinkle Swiss cheese over mixture.
  • Whisk cream, eggs, salt, and pepper in a bowl. Pour egg mixture over asparagus-cheese mixture.
  • Bake in the preheated oven until quiche is set and a knife inserted in the center comes out clean, about 30 minutes.
