1 lb favorite pasta (I usually use linguini)
1 tablespoon olive oil
2 tablespoons butter
4 -6 cloves garlic, sliced
1 lb large peeled shrimp
3/4 cup white wine
1/3 cup cream (or half-n-half)
1 pint grape tomatoes
1 cup pitted kalamata olive, drained
3 -4 large handfuls Baby Spinach
1 cup crumbled feta cheese
salt and pepper

Steps:

  • In a large pot, boil salted water and cook the pasta as directed on the box. Meanwhile, heat a LARGE skillet to medium-high heat.
  • Add oil and butter. Once melted, add the garlic and shrimp. *If you like a thick cream sauce, sprinkle the shrimp with 2 tsps. flour before adding them to the skillet.
  • Cook about one minute, then add the wine and cream. Toss and cook another minute, then add olives and tomatoes. Cook another minute or two.
  • Finally, mix in the strained pasta and spinach leaves. Remove from heat once the spinach wilts. Salt and Pepper to taste. (Season carefully, the olives and feta add a lot of salt!).
  • Divide onto plates and top with feta cheese.

1 (16 ounce) package penne pasta
1 ½ tablespoons butter
½ cup chopped red onion
2 cloves garlic, minced
1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
1 (14 ounce) can artichoke hearts in water
1 tomato, chopped
½ cup crumbled feta cheese
3 tablespoons chopped fresh parsley
2 tablespoons lemon juice
1 teaspoon dried oregano
salt to taste
ground black pepper to taste

Steps:

  • In a large pot with boiling salted water cook penne pasta until al dente. Drain.
  • Meanwhile, in a large skillet over medium-high heat melt butter, add onion and garlic and cook for 2 minutes. Add chopped chicken and continue cooking, stirring occasionally until golden brown, about 5 to 6 minutes.
  • Reduce heat to medium- low. Drain and chop artichoke hearts and add them, chopped tomato, feta cheese, fresh parsley, lemon juice, dried oregano, and drained penne pasta to the large skillet. Cook until heated through, about 2 to 3 minutes.
  • Season with salt and ground black pepper. Serve warm.

1 teaspoon olive oil
2/3 ounce pine nuts, about 2 tbsp
1 1/2 teaspoons minced garlic
10 ounces frozen chopped spinach, thawed (I used freshly cooked spinach and it was just fine)
1 lb plum tomato, chopped
4 ounces feta cheese, crumbled
6 medium olives, black,pitted and chopped (I prefer the green Greek or Italian olives)

Steps:

  • Cook pasta according to package directions (without butter or oil), drain and set aside.
  • Coat a large skillet with cooking spray.
  • Add olive oil and heat over medium-high heat until oil sizzles.
  • Add pine nuts and garlic.
  • Cook and stir until pine nuts are golden brown, about 3 minutes.
  • Stir in spinach and tomatoes and cook until heated through, stirring occasionally, about 3 minutes.

1 cup chopped green onion (use only the white and pale green)
7 ounces crumbled feta cheese
6 tablespoons chopped fresh parsley
1/4 cup chopped fresh dill
1/4 cup extra virgin olive oil
12 ounces penne pasta
salt
pepper

Steps:

  • Mix the first six ingredients in a large bowl. set mixture aside.
  • Cook pasta in a large pot of boiling water until just tender but still firm to bite, stirring occasionally.
