1 tablespoon minced fresh garlic
1 tablespoon serrano peppers or 1 tablespoon jalapeno chile, minced
1 1/2 lbs asparagus, snapped, steamed, but slightly undercooked
2 tablespoons fish sauce (I use gluten-free) or 2 tablespoons soy sauce (I use gluten-free)
1 teaspoon dark soy sauce (I omit it) (optional)
1 tablespoon water
1 tablespoon sugar
1 cup basil, chopped
2 large chilies, of your chiles, slice diagonal into thin ovals

Steps:

  • Heat a wok or large, deep skillet over high heat.
  • Add oil, making sure bottom of pan is completely oiled.
  • Add garlic and minced chile, toss until garlic begins to turn golden; about 15 seconds.

There are, of course, a number of ways to prepare and serve asparagus, but this method, in which it is paired with a savory vinaigrette, is one of Martha's seasonal favorites.

2 bunches asparagus (about 2 pounds), trimmed
1/2 teaspoon Dijon mustard
1 1/2 tablespoons champagne vinegar
Pinch of sugar
Freshly ground pepper
3 tablespoons extra-virgin olive oil
1 teaspoon lemon zest
1/2 teaspoon finely chopped fresh tarragon

Steps:

  • Prepare an ice-water bath; set aside. Bring a large pot of water to a boil. Add a generous amount of salt, and the asparagus. Return to a boil, and cook until asparagus are bright green and tender, about 3 minutes. Transfer to ice bath to cool. Drain well, pat dry, and transfer to a serving platter.

  • Choose fresh, tender asparagus. Look for spears that are bright green and have tightly closed tips. Avoid spears that are limp or have brown or yellow spots.
  • Trim the asparagus spears. Cut off the tough, woody ends of the spears. You can do this with a sharp knife or by snapping them off with your fingers.
  • Blanch the asparagus. This will help to preserve the asparagus's color and crispness. To blanch the asparagus, bring a large pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes, or until the asparagus is bright green and tender. Immediately transfer the asparagus to a bowl of ice water to stop the cooking process.
