2 pounds white asparagus
salt and ground white pepper to taste
1 ¾ cups ground hazelnuts
6 tablespoons butter
5 tablespoons all-purpose flour
1 cup hot vegetable stock
1 cup hot milk
2 tablespoons lemon juice
1 pinch white sugar
1 pinch ground nutmeg
¼ cup heavy whipping cream
1 egg yolk

Steps:

  • Peel asparagus with a vegetable peeler from top to bottom, starting below the tips. Cut off any woody ends.
  • Place asparagus in a large, wide pan; pour in enough lightly salted water to just cover. Bring to a boil; reduce heat and simmer gently until spears are tender and can be easily pierced with a sharp knife, 15 to 25 minutes depending on the thickness. Drain well.
  • Pour hazelnuts into a dry skillet; cook and stir over medium heat until fragrant, about 2 minutes. Remove from heat.
  • Melt butter in a saucepan over medium heat. Stir in flour until a paste forms, about 2 minutes. Add hot vegetable stock and hot milk a little a time, whisking continuously until sauce is thick and smooth, about 4 minutes.
  • Stir hazelnuts, lemon juice, sugar, and nutmeg into the sauce. Season with salt and white pepper. Simmer gently over low heat, stirring frequently, for 5 minutes.
  • Whisk heavy cream and egg yolk together in a small bowl until smooth; whisk into the sauce. Simmer until heated through, but not boiling, about 2 minutes. Serve the sauce with the cooked asparagus.

BUTTER-BRAISED ASPARAGUS

Butter-Braised Asparagus image

For the first-of-the-season asparagus, keep it simple with butter, lemon and sweet herbs. For the best texture, peeling the stalks really makes a difference.

Provided by David Tanis

Categories     easy, quick, vegetables, side dish

Time 20m

Yield 4 servings

Number Of Ingredients 9

1 1/2 pounds large or medium asparagus
6 tablespoons butter
Salt and pepper
2 tablespoons lemon juice
1/2 teaspoon lemon zest
1 tablespoon snipped chives
1 tablespoon roughly chopped parsley or chervil
1 teaspoon chopped tarragon, plus more for garnish
1 tablespoon chopped dill, plus more for garnish (optional)

Steps:

  • Snap off and discard the tough bottoms of the asparagus spears. If using large, thick asparagus, peel the lower ends with a vegetable peeler.
  • Put butter in a wide skillet over medium-high heat. Add asparagus in one layer and season with salt and pepper. Add 1/2 cup water, cover, and bring to a simmer. Cook until the asparagus is firm-tender, about 3 minutes. Take care not to overcook them; they should still be bright green. (They will continue to cook a bit once the heat is off.) Remove the asparagus from the pan and place on a serving platter.
  • Turn heat to high and simmer briskly until most of the liquid has evaporated, a minute or so. Add lemon juice and zest to the buttery juices. Turn off heat and stir in chives, parsley, tarragon and dill, if using. Check seasoning. Spoon the sauce over the asparagus, garnish with a few herb leaves, and serve.

ASPARAGUS WITH HAZELNUT BUTTER

Asparagus with Hazelnut Butter image

Sounds good and simple.

Provided by Vicki Butts (lazyme)

Categories     Vegetables

Time 20m

Number Of Ingredients 5

1 lb asparagus
1 oz finely ground hazelnuts
2 Tbsp butter
2 tsp cider vinegar
salt and pepper, to taste

Steps:

  • 1. Wash asparagus under cold running water. Snap off lower end of each stalk with your fingers. Let the stalk break where it wants to, this will leave only the tender portion of the stalk. Young tender asparagus can be cooked in a steamer for 5-7 minutes, the more mature stalks for 7-10 minutes. Do not over cook asparagus, it will lose flavor and nutrients if over cooked.
  • 2. At the same time, place the hazelnuts and butter in a small heavy skillet.
  • 3. Heat until the butter melts and mix thoroughly. Remove from heat and stir in vinegar. Season with salt and pepper to taste.
  • 4. Pour hazelnut butter over hot asparagus. Serve at once.

Tips:

  • Select the Right Asparagus: Choose fresh, firm asparagus spears with tightly closed tips. Avoid spears that are wilted, limp, or have woody ends.
  • Prepare the Asparagus Properly: Wash the asparagus thoroughly and trim off the woody ends. Peel the bottom inch of each spear if desired, but this is not necessary. You can also cut the asparagus into smaller pieces if preferred.
  • Cook the Asparagus Al Dente: To retain its crisp texture and vibrant color, cook the asparagus al dente, meaning it should still have a slight bite to it when pierced with a fork.
  • Make the Hazelnut Butter: To make the hazelnut butter, simply toast the hazelnuts in a pan until fragrant, then blend them with melted butter and a touch of salt. You can adjust the salt and pepper to taste.
  • Serve the Asparagus Immediately: Asparagus is best served immediately after cooking to enjoy its peak flavor and texture. Drizzle the hazelnut butter over the asparagus and garnish with fresh herbs like parsley or chives.

Conclusion:

Asparagus with hazelnut butter is a delicious and versatile side dish that pairs well with a variety of main courses. With its vibrant green color, tender-crisp texture, and nutty flavor, this dish adds a touch of elegance and sophistication to any meal. Experiment with different types of nuts, herbs, and seasonings to create your own unique variations of this classic recipe.
