Steps:
- Place an oven rack on one of the top two shelves, then preheat the oven to 400 degrees F. Grease a 3 or 4-quart casserole dish with cooking spray, butter or olive oil.
- Bring a large saucepan of salted water to a boil. Cook the asparagus, in batches if necessary, until crisp-tender, 3-4 minutes depending on the thickness of the asparagus. Drain through a colander, shaking off any excess water, then transfer to the baking dish. Toss with 1 teaspoon salt and 1/2 teaspoon pepper.
- In the same pot, melt 3 tablespoons butter over medium-low heat. Whisk in the flour and cook, stirring, until the mixture develops a nutty fragrance and darkens slightly, 2-3 minutes (this is known as a roux). Whisk in the half-and-half, 1/2 teaspoon salt, and 1/4 teaspoon pepper, then increase the heat to medium-high. Whisk until thick, 4-5 minutes. Remove the sauce from the heat, then add the cheese in handfuls, whisking until smooth. Pour the sauce evenly over asparagus.
- Melt the remaining 2 tablespoons butter in a small skillet, then stir in the panko and 1/2 teaspoon salt. Sprinkle over the cheese sauce.
- Bake for 10 minutes, then turn on the broiler. Broil for 1-2 minutes, or until the breadcrumbs are golden brown (watch closely to make sure they don't burn).
- Serve warm.

SAVORY WAFFLES WITH ASPARAGUS, GRUYERE AND ONION
I took one of our family's favorite puff pastry recipes, which uses a similar mix of ingredients, and translated it to savory waffles. It's a change of pace from sweeter fare. Served with a ham steak and fried eggs, it makes a fabulous meal. Feel free to add maple syrup or a spicy glaze. -Leslie Ponce, Miami, Florida

Steps:
- Preheat the oven to 375°F. In a 10-inch non-stick skillet simmer the asparagus in water to cover for 3 to 5 minutes, or until it is just tender. Drain the asparagus, rinse it under cold water, and pat it dry with paper towels. Cut the asparagus crosswise into 1/4-inch pieces and transfer the pieces to a bowl. In the skillet cook the onion with salt and pepper to taste in 1 tablespoon of the butter over moderate heat, stirring frequently, for 5 minutes. Add the sugar, cook the mixture, stirring, for 3 to 5 minutes, or until the onion is golden, and transfer the mixture to the bowl. Stir in the Gruyère, the tarragon, and salt and pepper to taste.
- In the skillet, cleaned, heat the remaining 1/2 tablespoon butter over moderate heat until it is melted, tilt the skillet to coat it, and remove it from the heat. In a bowl whisk the egg yolks with the flour and salt and pepper to taste until the mixture is thick and lemon-colored. In another bowl with an electric mixer beat the egg whites with a pinch of salt until they just hold stiff peaks, fold them into the yolk mixture gently but thoroughly, and pour the egg mixture into the skillet, spreading it evenly. (If the skillet handle is plastic, wrap it in a double thickness of foil.) Bake the omelet in the middle of the oven for 7 minutes, or until it is puffed and almost cooked through, spoon the filling down the middle of it, and with a spatula fold the omelet in half to enclose the filling. Bake the omelet in the middle of the oven for 1 minute more, or until the cheese is melted and the omelet is cooked through.

- Scoring the Dough
- Use a sharp knife to ensure that the edges rise evenly; pricking the center of the pastry with a fork keeps it from puffing up too high as it bakes.
Tips:
- Choose the right asparagus: Look for asparagus spears that are firm and have tightly closed tips. Avoid spears that are wilted or have woody bottoms. - Prepare the asparagus properly: Trim the woody ends of the asparagus spears and peel the bottom third of each spear. You can use a vegetable peeler or a sharp knife to do this. - Cook the asparagus correctly: Asparagus can be cooked in a variety of ways, but the most popular methods are steaming, roasting, and grilling. Steaming is the gentlest method and will preserve the asparagus's delicate flavor. Roasting and grilling will give the asparagus a slightly smoky flavor. - Use high-quality ingredients: The quality of the ingredients you use will greatly affect the flavor of the dish. Use fresh asparagus, good-quality butter, and freshly grated Gruyère cheese. - Serve the asparagus immediately: Asparagus is best served immediately after it is cooked. This will ensure that it is still tender and flavorful. ###Conclusion:
Asparagus with Gruyère is a classic French dish that is easy to make and always a crowd-pleaser. The creamy, nutty flavor of the Gruyère cheese pairs perfectly with the tender asparagus spears. This dish is perfect for a light lunch or dinner, and it can also be served as a side dish. With its simple ingredients and elegant flavor, asparagus with Gruyère is a dish that will impress your guests without requiring a lot of time or effort. So next time you're looking for a quick and easy meal, give this recipe a try. You won't be disappointed!
