Steps:
- Combine minced garlic in a small bowl with 3 Tbsp olive oil and set aside while preparing your asparagus and gathering the rest of your ingredients.
- Break off the fibrous ends of your asparagus by holding the base end and snapping it wherever it snaps. Discard the ends. I like this method most because it ensures that you won't have any fibrous ends. You can also use a knife to cut the ends off about 1" up from the base.
- Transfer asparagus to a rimmed baking sheet then drizzle and toss it with the garlic oil. Sprinkle lightly with salt & pepper and bake at 400°F for 13-18 mins (depending on the thickness of asparagus) or until lightly browned and easily pierced with a fork.
- While baking, saute 6 strips of bacon, drain on paper towels then coarsely chop. Serve asparagus warm and sprinkle the top with bacon.

Steps:
- Make the bacon jam:
- Cook bacon in a large skillet over medium-low, stirring occasionally, until brown and crisp, about 15 minutes. Add onion and cook until lightly browned, about 5 minutes, stirring frequently. Add garlic and cook, stirring, 1 minute more. Add sugar, apricots, vinegar, and 1/4 cup water and bring to a boil, stirring. Add thyme, rosemary, and bay leaf and simmer until liquid is syrupy, 8-10 minutes. Remove herb sprigs and let bacon mixture cool. Transfer to food processor and pulse to a chunky purée. Season with salt and pepper.
- For the Brussels sprouts:
- Bring a small pot of salted water to a boil and prep a bowl of ice water. Add Brussels sprouts and cook until bright green, 1 minute. Drain and transfer to ice water to cool. Drain well and pat dry with paper towels.
- Heat oil in a large skillet. Add Brussels sprouts, garlic, and thyme and cook over high heat, stirring occasionally, until crisp-tender and browned in spots, about 5 minutes. Discard garlic and thyme.
- Arrange Brussels sprouts cut-side up on a serving tray and spoon about 1 tsp. bacon jam onto each. Spear each Brussels sprout half with a toothpick and serve.
- Do ahead
- Bacon jam can be made up to 5 days ahead. Refrigerate in an airtight container and return to room temperature before serving.
Tips:
- Choose fresh asparagus sprouts: Look for asparagus sprouts that are bright green and have tightly closed tips. Avoid any sprouts that are wilted or have brown spots.
- Trim the asparagus sprouts: Before cooking, trim the asparagus sprouts by removing the tough ends. You can do this by snapping off the ends of the sprouts or by using a sharp knife to cut them off.
- Cook the asparagus sprouts quickly: Asparagus sprouts cook quickly, so it's important not to overcook them. Otherwise, they will become mushy. Aim to cook them for no more than 2-3 minutes.
- Use high-quality bacon: The type of bacon you use will make a big difference in the flavor of the dish. Choose a bacon that is thick-cut and has a good smoky flavor.
- Don't overcrowd the pan: When cooking the asparagus sprouts and bacon, don't overcrowd the pan. Otherwise, the vegetables will not cook evenly and the bacon will not get crispy.
- Season to taste: Once the asparagus sprouts and bacon are cooked, season them to taste with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or paprika, to taste.
Conclusion:
Asparagus sprouts with bacon is a quick and easy side dish that is perfect for any occasion. It's a healthy and delicious way to get your daily dose of vegetables. The asparagus sprouts are tender and flavorful, while the bacon adds a smoky and savory flavor. This dish is sure to please everyone at your table.
