BACON WRAPPED ASPARAGUS BUNDLES

Bacon Wrapped Asparagus Bundles image

These bundles can be easily prepared on an outdoor grill or in a hot oven.

Provided by Rachael Ray : Food Network

Categories     side-dish

Time 18m

Yield 4 servings

Number Of Ingredients 5

1 1/2 pounds asparagus spears, trimmed 4 to 5 inches long tips
Extra-virgin olive oil, for drizzling
A few grinds black pepper
4 slices center cut bacon or pancetta
Chopped chives or scallions, optional garnish

Steps:

  • Preheat oven, if using, to 400 degrees F.
  • Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.
  • To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.
  • For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

Tips:

  • Use fresh asparagus. Fresh asparagus will have a crisp texture and a bright green color. Avoid asparagus that is limp or has brown or yellow tips.
  • Trim the asparagus properly. Cut off the woody ends of the asparagus spears. You can do this by bending the spear until it snaps naturally. This will ensure that the asparagus is tender and easy to eat.
  • Cook the asparagus until it is tender-crisp. Asparagus should be cooked until it is just tender, but still has a slight crunch to it. Overcooked asparagus will be mushy and bland.
  • Use a variety of cooking methods. Asparagus can be roasted, grilled, steamed, or sautéed. Each cooking method will produce a slightly different flavor and texture. Try experimenting with different methods to find your favorite way to cook asparagus.
  • Add asparagus to your favorite dishes. Asparagus can be added to salads, soups, pasta dishes, and stir-fries. It is also a great side dish for grilled or roasted meats and fish.
  • Store asparagus properly. Fresh asparagus can be stored in the refrigerator for up to 3 days. Wrap the asparagus in a damp paper towel and place it in a plastic bag. You can also store asparagus in a glass of water in the refrigerator. Change the water every day.

Conclusion:

Asparagus is a delicious and versatile vegetable that can be enjoyed in many different ways. With its mild flavor and delicate texture, asparagus is a great addition to a variety of dishes. Whether you are roasting it, grilling it, steaming it, or sautéing it, asparagus is sure to please everyone at the table. So next time you are looking for a healthy and delicious vegetable to add to your meal, don't forget about asparagus!
